I never thought about Ireland having oysters! Knowing that Ireland is an island I should have known that you would have great oysters. The cream you have has much higher butterfat than anything we can get here. So, I know that your take on my oyster stew with Irish oysters, Irish potatoes, and extra buttery cream had to be absolutely delicious.
Robert, it is still a little chilly in Maryland. So, I can justify another batch of oyster stew/chowder. I think I will fix us a big pot next week. Enjoy!

@@robertthompson5501 Great question...years ago that saying was followed religiously because oysters were gathered from the wild. During summer/warmer months the oysters were spawning, flavor diminished, sizes smaller, refrigeration/transportation were not reliable. Now, all of those factors have been overcome. It is always oyster season somewhere in the world; oyster farmers now have oysters that are sterile and do not spawn; refrigeration even for the homeowner is no longer a problem; transportation assures us that we can get fresh oysters all year from anywhere in the world. So, I think I will plan on making a big pot of oyster goodness for Juneteenth and the 4th of July.
I was searching for Oyster Chowder on UA-cam and finally came to this video. I love the added ingredients that make it more like a meal instead of a soup appetizer. I'll be making this soon.
I have prepared the oyster "chowder" three times in the last month. Like me, the recipe has evolved over the past year or so. I use 3 pints of oysters, 1 pint of Half and Half, one pint of heavy cream, two sticks of unsalted butter, 2 to 3 lbs of diced potatoes, one leek very thinly sliced, 8 oz of portabello mushrooms, and 3 to 4 shitake mushrooms. I advise you to only use the oyster juice if you have a sieve or cloth to strain out the sand and shell debris first. Also, rinse your oyster gently several times under cold running water. This will remove 99% of the grit and any remaining will be undetectable. I do plan to make a follow-up video with all the changes. This stew/chowder is not for the health-conscious among us. It is fatty, greasy, high in calories, and carbs. But, that is also why it is so delicious and why we only eat this in our home during the winter holidays once or twice during the entire year. Make certain to plan your next cholesterol screening either before or 3 months after this meal. Enjoy!

I am so glad you loved it. I made some a few weeks and added tilapia filet, jumbo shrimp, and scallops. It was soooooo delicious‼ I was kickin' myself yesterday because I did not buy any oysters when I picked up my Sam's Club order. I have the shrimp and scallops. It is going to be oyster stew weather here in central Florida for the rest of the week. Gonna make that trip to get 2 pints of oysters and a fresh fish fillet from our local market. The frozen fish fillet did not stand up to cooking and fell apart. I seared the shrimp, scallops, and fish in blackening seasoning (Cajun seasoning or Old Bay and black pepper) and added them after the stew was finished cooking. Yep, time for Oyster Stew. Yum, Yum‼

I have 3 different types of mushrooms in my fridge arsenal at the moment. Last week, I went home and shopped at my favorite "exotic" supermarket, HMart in Maryland. I bought shitake, portabello, and oyster mushrooms. I bought them to make Mushroom Bulgolgi a Korean dish that I love but my hubby, not so much. But I will have more than enough mushrooms to try the Sweet Tomato Mushroom soup. Oddly, even though we are staying near the coast of SC (within 9 miles), we have been really hard-pressed to find fresh oysters and clams. I will try again this afternoon and hope the shortage was temporary due to the holidays. By the way, the Bernese Mountain dog is one of my favorite breeds along with the golden retriever.

The video could be a little shorter if you didn't show 100% of the chopping of vegetables. If you just showed a few seconds of the chopping each item would speed up the video. Hi ! Tripped across your oyster stew recipe only because I the caught the word "creamy" I was looking for in your vid title. Hadn't made oyster stew before although have had it oodles of times on the coast up here in the Northwest and want to make it like I have had it up here. Creamy and has body to it. Doesn't run out of your spoon like water. Watching you prepare your oyster chowder recipe eventually blew me away as your video continued increasingly reminded me of a few weeks ago I prepared the stock I saw on outdoorcastironcook's video I used as a guide for my first attempt at seafood chowder. Fogcrawler's Pacific Coast Seafood Chowder: ua-cam.com/video/QWYTlASme1o/v-deo.html I made half of Fogcrawler's recipe for the first time with two or three impromptu adjustments. No instant potatoes, clam juice, "mixed seafood raw" or scallops on hand. I threw in king and dungeness crab, cod, steamer clams, lobster, bacon, onions, Yukon or gold potatoes and 12/16 Patagonian p and d shrimp. Took 2 days. First day, boil crab and lobster 5-7 minutes in pickling spice, a splash or two of Zaterain's concentrate and add vinegar for easier peeling or whatever brine concoction you like in 20 quart pot with just enough water to cover crab while cooking, then cooled rapidly to under 150 degrees to stop cooking process. After removing the crab from the hot pot, I quickly pour off some of the hot brine into a separate pot and place a lot of ice in it to cool down then place crab in the cool brine making sure cool brine covers the crab while steeping overnight. Total time about 1-1/2 - 2 hours and most of that is waiting for the brine to come up to boil before placing in crab. On the second day, fried up the onions and bacon, steamed the clams, removed the meat then next the cod with Chachere's Creole seasoning, peeled the crab then sorting through the meat for shell fragment's, flaking the cod checking for bones, placing all the spices and ingredients together in a 8 qt pot. Placed cubed potatoes in the pot along with everything else and low simmer until soft. When potatoes are done to liking chowder is done. Total time on second day prep, mix, taste testing, simmering to serving time was about 3-1/2 hrs. Made over a gallon. Came out super and wowed my friends who later asked me "when ya make'n the next batch ?" LOL I shouldn't have to change a thing from the way you make Oyster stew just omit the crab etc and place in only oysters. Should taste just as wonderful. I see now a universal base recipe for either oyster stew or seafood chowder !

Could even add in some bacon. Cheaper, quicker to make and that "can't get enough" flavor as well. !
