Shopping List:
1 lb Lump Crab Meat (preserving some to garnish)
4 tbs butter
4 tbs flour
1/2 grated onion
1-2 stalk grated celery
1-2 tsp minced garlic (optional)
2 bay leaves
1 cup half & half cream
2 cups heavy cream
1.5 cups chicken stock or seafood stock
1.5 tbs lobster base
1 tbs Worcestershire sauce
hot sauce to taste
1/2 cup sherry (plus more if desired)
old bay, salt & pepper, garlic powder, and onion powder to taste
Directions:
Melt butter in a large stockpot or dutch oven over medium heat.
Mix in the onion, celery, and garlic and season with salt and pepper. Sweat the veggies for about 1-2 minutes
Add in Lobster Base and stir to incorporate
Stir in flour to form a roux. Cook this mixture for about 3 minutes to cook out the raw flour taste.
Gradually whisk in the half & half and bring to a simmer
Next, whisk in your heavy cream and chicken stock and bring back to a simmer
Pour in your sherry (reserve more for later if desired based on taste)
Add Old Bay, Worcestershire, Hot Sauce and taste for seasoning. Adjust as needed
Cover and simmer for 30 minutes, stirring occasionally
Add in crab meat and simmer for another 15 minutes. Taster one more time for seasoning and then serve mr make it happen - Розваги

I’m here in Charleston… my favorite soup! One of my favorite restaurant I go to serves this up with a shot of sherry on the side so the customer can pour sherry over the top for an added hit of flavor…. Phenomenal!

As a first pass I made this with three substitutions: chicken bouillon, cheap sherry, and imitation crab meat. My family devoured it. I'll use lobster base, the sherry you suggested, and REAL lump crab meat next time.❤️

Man, thank you so much for this video. Being from Norfolk and the Eastern Shore of VA as a kid and raised abroad the U.S., this was a coveted favorite of mine that I dearly missed for so long. Nothing comes close to this exquisite dish that is a staple of Tidewater VA and the Carolina Coast. Recently I moved back to the East Coast and this immediately on my mind. My favorite was at the Freemason Abbey restaurant in Norfolk, Now I hear there is a She Crab Soup festival in VA Beach in April that I already missed ... next year I'm checking this out. In the meantime I'm going to finally try and make this at home thanks to you.

Chef Tip... put the crabs 🦀 in the freezer for about 1 hour first. This will put them to sleep before putting them in the boiling water. It's a more humane way to cook them 😊

Love she crab I never had it growing up moved to VA and had it for the first time and fell in love. My Great grand parents are from SC my great grand Dad is from Charleston. I going to try and make this I will have to make a small batch since I’m the only one who eats it. I have crab meat in the fridge now.

Just made this recipe and it was a total hit with my family! I'm in France so i couldn't find Old Bay, i had to make my own mix of spice to have something like it, but it was absolutely de-li-cious! Thank you so much !
Here are the ingredients in case you want to make some. I use piment d'espelette for paprika and cayenne. Not sure about the availability of celery seed there, but a touch of fennel/fenouil is nice with any seafood
