    Tried this recipe over the weekend. As a former New Englander living in the Pacific Northwest, we’re always looking for good chowda. We found this recipe to be great overall but we are going to cut back on the pepper and a bit of salt the next go around since the brine is salty on its own. Loved the two different types of clams. If you want flavorful clam and potato chowda, this is it.

    i am a life long New Englander and Clam Chowder is one of those odd dishes once you have experienced it when you are young you tend to compare all other clam chowder to your first and my Mom happened to make the best clam chowder and corn chowder in the world and i regret not getting the recipe for her and what's really strange some of the worse clam chowders i have had is at a Clam Chowder Festival , i am going to try this recipe for sure

    I may not have heavy cream or milk but I always have half-n-half and evaporated milk. My Mainer grandmother made corn chowder with evaporated milk so that's the taste I grew up being used to and it's excellent!

      Evaporated milk is what I was thinking when she added the light cream. I always keep cans of it on hand, because I know it won't ever go bad on me. I put it in my coffee and use it in cornbread and pancakes, etc. and I don't bother to dilute it.

      I use evaporated milk in all my cream soups. It does not separate no matter how many times it’s reheated, works supremely with an electric stove where there’s not a steady temp like a gas stove and I don’t have to stand there and babysit the soup, stirring endlessly and hoping it doesn’t separate.

    Made this exact recipe months ago, tasted really good. Not super thick but still pretty creamy and has a ton of clam flavor. Some weird techniques but it came out great.

    I love New England Clam chowder (Clam Shack's take on Woodman's Chowder.) My 77 yr old boyfriend made this for me for dinner one night, and I was delighted. I'm from Boston and have had NE Clam Chowder from many wonderful restaurants all along the coast. This recipe holds its own with blue ribbon performance. Thank you for sharing. I'm sharing it with my family for the holiday weekend!

    Several years ago my girlfriend, now wife decided to take a trip and drive up the coast from PA and attempt to make it to Maine, we both love clam chowder so once we got to I think CT we decided we would stop at every bar diner or restaurant we passed and grab a beer and a cup of chowder, we never made it to Maine but we stayed a couple extra days in little towns that we liked but we both agreed the best was a little bar in Warwick RI, can’t remember the name but it was on a dock right on the water and it was the best clam chowder I’ve ever had, wish I could remember the name of the place, just a little dockside bar but it was really good

    What a unique and imaginative way to make clam chowder! And it's so simple and easy it would make a great recipe for children learning how to cook. Lots of lessons on building and blending flavors with just a few ingredients. Brilliant!

    This is a delightful recipe! I absolutely love clam chowder! I tried making it just now, and I only have two critiques. After tasting, I did feel that 2 tsp of pepper was a bit much. As a person who loves spicy food, I could take the heat. But I think the average person may find the amount of pepper a bit heavy handed. To me it was comparable to Chinese hot and sour soup. The pepper may be overpowering the rest of the clam chowder flavors too much. I'll try adding half of the amount next time and see how it turns out.
    Secondly, my instinct told me to hold off on adding the additional 1 1/2 tsp of salt near the end, just to taste it when it was done to see how the flavor developed without it. I'm glad I didn't, because I felt that the amount of salt was perfect and I didn't end up needing to add that 1 1/2 tsp in. Maybe it depends on the brand of canned clams you use, since different brands may use differing amounts of salt in the brine? But overall, absolutely LOVE this recipe and all the techniques used. This is definitely going to be my recipe for clam chowder, with the revisions I posted above.

      Lol. I use a TON of pepper in all my cooking, and even in my clam chowder we will add a generous deluge of hot sauce😂 Everything is HOTTTT here. We have an entire shelf in the refrigerator filled with Chilli oils and Chilli pasts and sauces of all kinds

      How much onion? Added very small amount of chopped celery and green pepper, about 3 T each and 2 tsp thyme, and it was perfect. An award winning clam chowder from a NJ restaurant, adds the last 3 ingredients. This tasted almost exactly like theirs! Thanks for a great recipe!!

    Much as I love ATK, sometimes you all are too Precious. I learned to make chowdah from my Maine MIL, who was a famous cook. 1. Why not put a lid or plate on your bowl & place bowl in ‘fridge? Please, people! We’ve got to stop using single-use plastic! 2. Cook onion and celery in butter, or bacon fat til soft. Add stock (seafood, or clam juice) and diced potatoes - cook 15 minutes. (I add several stems of parsley, and thyme, salt & pepper.) Add clams - or better yet - fish & heat through. Add milk, cream, or half n half & gently warm. Taste for seasonings & serve. It’s better the next day.

      I was looking for someone that made a comment on bacon fat in this. NE clam chowder is not chowder without the frying of bacon to start. You can add bacon to it or not, but the bacon fat has to be there.

    I made this and it was really good. I let the clam and potatoe mixture set for about two hours.I did add a very small amount of fresh parsley and once it was finished I also tried some paprika on top.

    I love that you did this!! I have gone to Woodmans once a year since I was a kid. Lobster, steamers, and their fantastic chowder. If you're doing some North Shore content, check out Salem Willows in summer. Hobb's toffee and corn, and "those who are in the know, know about tender steak with pepper and Chop Suey sandwich!". Local legends.

    I too have always loved the clam chowder at Woodman’s in Essex (luv the fried clams too !
    Captain Parker’s Pub in Yarmouth on Cape Cod is excellent as well … many other places on Cape Cod also serve delicious chowdah

    I'm not into clams so I use chunks of canned white albacore tuna -- & it's really good!! Cleaned canned salmon in chunks also works really well too. You just hv to stir gently so as to not break up the fish chunks!! I may also try to add 1" squares or so sometime, cut out of sole fillets. Or try haddock or halibut; they should work too. I like a thick creamy rich soup, myself, no doubt from living up in the great white north, home of the brave & land of the free!! Along with thick slices of some great crusty French or Italian loaf bread, & real butter. Mmmmmmmm.....!!!

    I love the technique, but find myself thinking about adding some rendered bacon or salt pork; corn kernels (frozen or fresh); a dash of Worcestershire; and some chopped fresh tarragon or chervil. Chacon a son gout!

      yes and leave the addded salt out and the clams initially- they will only get tough, thus the futile gentle simmer. and buy fresh clams if available -game changer. also suggest tasting to possible lessen the clam conconction that comes with canned clams (have you tried it - eeeh) and swap milk organic for large portion if not all of cream - fat often masks flavor not enrichens

      That would be a Manhattan Clam Chowder if you add bacon… so it’d a thing. It’s your choice, but corn in clam chowder does not sound appetizing. I would make corn chowder instead.

    This one looks great, and thankfully there's actually clams in it. Most of these white, pasty, flour-filled, bland things you get commercially are bad enough, but it gets worse because you normally find less than a handful of actual claims in the stuff be it cup or bowl. I'm loving the patience factor with this one.

    Most clam chowder I've had doesn't have enough clams. You seemed to have solved that problem. I'm also a huge fan of Manhattan clam chowder.

    Great tasting recipe, but I would saute the onions before the marinade. They ended up being undercooked and I had to simmer the chowder for longer than I wanted to making the clams a bit chewy.

    Interesting technique so I tried it. Definitely felt it was bland and missing the ingredients I usually add: sautéed onions, celery, and carrots. So I added them late, along with a few tablespoons of flour and a couple bay leaves. Now it’s awesome.

    Add vinegar to the water when boiling the potatoes. It prevents the potatoes from over cooking. Gives them a really nice texture.

      @@sandilobianco6734 I just made clam chowder for the first time a couple weeks ago. I cut the potatoes in half and boiled in water with a little vinegar, they came out perfect. I was able to dice them when they were done and they didn't break apart at all.

    I don't mind canned seafood at all, but cooking with it is a different story. Then there's the dairy-seafood combo. That's a tough sell for me.

    I prefer my chowder a lot thicker! Thick enough that my spoon can stand in it! Maybe I can add more potato starch to thicken it to my preferred consistency! ☮️🖖🏽

    Probably no one from the Test Kitchen reads these, but I’m wondering how I could freeze this. I’ve been trying to stock our freezer with soups and stews. Everyone loves clam chowder and this thinner type is the favorite. I don’t like frozen potatoes in soups but I’ve had some luck freezing the “bases” of some soups and adding the things that don’t freeze well when they’re reheated to eat.       You can freeze the base mixture and add the cream after you have thawed it out and brought to a simmer.

    The onions don’t get sautéed first? Is the boiling it with potatoes enough? Maybe I missed something but it sure looks like she just added raw onions.

    Actually, when she was cutting the russet potatoes and putting them in cold water, it would've released its natural starches, and that could have been used to help thicken the Chowder instead of the added potato flakes.

    I think the instant mashed potatoes is an excellent idea
    This is a good recipe I will be trying this
