Chhana'r Kofta Curry-Chhanar Borar Dalna-Bengali Paneer Kofta Recipe

- Chhanar Koptakari (kofta curry) is our favourite from the vast repertoire of chhana or paneer-based recipes in the Bengali cuisine. Unlike the regular chhanar/paneer dalna, the chhanar borar dalna requires a bit more work in forming and frying the koftas, and then making the curry. The browning of the koftas also creates a far more interesting texture and flavour contrast compared to plain chhana/paneer. It takes a little over an hour to make this, but you will be rewarded with juicy sponges soaked with the ginger-cumin-ghee flavoured curry. Since this dish is quite rich, pair this with a sparingly spiced dal (such as Bengali masoor dal with radhuni tempering). It can also compliment a light Bengali-style fried rice (recipe link below).

my mom adds boiled plantain in the mixture instead of maida. If the chena is cooled before mixing, the stickiness of boiled plantain is enough to hold the shape of the balls. Also adding chopped coriander and a bit of grated ginger kinda makes them more interesting.
What a couple! Thanks to Saptarshi and Insiya for rendering eternity to recipes for classical Bengali cuisine, especially those from East Bengal. I was afraid that in the modern age when our grandmothers and for many their mothers are no more, and with the onslaught of so many influences around - these recipes will be lost forever, alongwith a large part of our identity. Taking it few steps beyond, you have applied precision to your recipes and used the most modern implements. Please take your efforts forwards and not leave any recipe uncovered. Wishing you two the very best. Also allow me to note that Insiya, in spite of coming from a widely differing background, is showing what an ideal Bengali lady can do with her culture. Live on!!
Only addition my mother used to give a pinch of hing to the 'phoron' at the beginning which give this vegetarian dish an unique flavor 😍😋

Sharing here a sweet memory of Chanar kofta..... In school one of my friend used to bring incredible Chanar kofta for tiffin....i loved that so much but after so many years i couldn't get the perfect recepie to make them .... Now I think I could make them perfectly....

The raisin at the center is absolutely essential. My father adds some broken cashews with this too, before frying.
Good one! Ma uses pati lebu in making the chhana and it gives the chhana a subtle lemony aroma...she also puts narkel kora in the balls!

I’ve made this by using the Bongeats Dhokar Dalna curry recipe. Uses coconut. Very yummy. Otherwise similar except no turmeric in chhana.
If you immerse the fried channa balls in hot water for 15-20 mins. The channa will absorb the gravy better. It will have a crispy exterior and meltingly soft interior. My mother would use calcium lactate to make chhana or the leftover chhana water sometimes to make more chhana
