How To Make Yacon Syrup

  • You can grow your own syrup. Yacon has so many uses but one of the main reasons I grow it is to make my own syrup. The syrup is rich and dark and it’s brimming with nutrients. Clear, yellow syrups means that it has been refined and most of the nutrients have disappeared. As well as being rich in colour it is also rich in flavour, it tastes like malty caramel. It works extremely well in raw chocolates, in a mug of cacao, on buckwheat pancakes, in a chocolate congee and I also use it in many deserts.

    Thanks for sharing, I tried growing yacon about 5 years ago, I wasn't too impressed with it. I usually make maple or birch syrup, alternating every other year. The plant that I grow every year that is similar to yacon is Jerusalem artichoke as far as the inulin content, I like to eat them fresh.

      I love eating yacon fresh as well but it’s great to make the syrup. Here in the UK yacon grows great. It needs very little attention and you get a good harvest from each plant. It may be different where you live 💚

      To make the yacon syrup you boil the yacon juice. Hope that’s helpful ❤️🌱❤️

    Thank you for this. I am growing yacon this year. With two plants I doubt I will make syrup this year, but maybe next. 😁 How do you use your syrup?

      I use my syrup in my mugs of cacao, drizzled on pancakes, in raw chocolates. Anywhere that needs a little drizzle of yummy sweetness ❤️

    Can you make Yacon syrup from Yacon powder as well?

      I am not aware you can as the syrup is made from the juice.
