Ingredients for the cake:
400g SR flour
400g caster sugar golden
400g butter
2tsp baking powder
1tsp vanilla extract
6 eggs
2 tbsp milk
26 mins at 175 in oven then allow cakes to cool for 1 hour
Ingredients for the icing and jam:
150g butter
300g icing sugar
Splash of milk
Strawberry Jam
Icing sugar for dusting

The avocado brownies have become so beloved in my house for more than 10 years that they are a staple at any family event. Completely agree re baking reels, I've never got on with reels for anything, too hectic and fast, I feel like it's all just flashed past my eyes... I can't absorb any of it!! Plus baking is so specific, so a detailed video with explanations is very helpful! I also watch them before sleep, so soothing ❤

Victoria sponge is lovely, I loved having it when I visited the UK.
There is a screw on the mixer paddle that lowers it so it almost touches the bottom of the bowl. Then there won’t be any bits at the bottom that aren’t mixed in.

Tan I only just got notification that your back on you tube. I have missed your calm interesting wholesome vlogs. I’m old enough to be your mum and am so thrilled to hear your voice and listen to what you’ve been up to. The biggest thing I love is your still the same sweet caring woman who’s now a mum. I’m so happy for you and sadly the last few months I am now legally blind. I still have 5% in one eye and could blow up a picture to get a rough idea of how you look and you’re still as beautiful and as young inside and out. Also not only does it stop you from getting shell in the mixture and making it easier just adding it in one or a few at a time, but also if one of your eggs is bad, it doesn’t ruin your mixture. I’ve always added it into a bowl before I add it to my mix. So happier back this is so fun!

Eggs weigh around 60g each (size dependant) so 6 eggs will be around 360g so makes sense for the cake recipe. I make sponge a similar way. Weigh the eggs then use same amount of butter, flour but reduced sugar

I think the reason why you shouldn't eat raw cake batter is actually ghe flour and not the egg! A common misconception :)
