Here in the Philippines we have a dessert called halo-halo (literally mix-mix), which is a mix of various sweet ingredients in crushed ice and milk. We didn’t have a blender, so what my mom would do is make the ice by putting milk and sugar already into the water before freezing. The resulting ice could easily be scraped with a spoon to get you a fine, sweet ice slush, just like your granita base.
Oh my! That granita slushie sounds excellent! Can never go wrong with the frozen margarita or strawberry daiquiri. I like doing a hybrid of frosé + strawberry daiquiri.

Love this. I got stuck behind the bar at my cousin's house a couple weeks ago blending all kinds of frozen drinks (a peach and mango daiquiri won the evening!) so this granita recipe is timely. Now I know (for next time)!
I love strawberries, Rum, oh yes!!! Great tip, keep it all cold, Rum will not freeze in the freezer, Frozen glass, You can drink it slow and enjoy it!!! Great video !!! And you can make a bigger version!!! You will need a bigger glass
The Strawberry Daiquiri was delicious on a hot night. Havana club 3yo is noticeably present but doesn't overpower the cocktail. And metal straws are indeed not ideal (they clog up), but that was all I had. Thanks for the wonderful recipes.
It's such a shame that the frozen strawberry Daiquiri has such a bad rep especially among bartenders so it's always great to see them being made properly with quality ingredients and measurements!
Is there a trick to guaging dillution in a boozy granita the way you float an egg in a sorbet base and see if the part that floats over the surface is the size of a 25 cent piece (or your aus dollar coin)?
Love the hand behind the back stance at the end - very classy! BTW, I know it's akin to using a mallet, but are those hand cranked ice crushers good for a particular style of cocktail?
I was keen to try the Granita Slushie, but then got puzzled. You recommend to go on the sweeter side with frozen cocktails, but one seems to not follow the same advice. Is the peach liqueur you're using very sweet? How much sirup would you add when using extra dry vermouth as opposed to (what I'm assuming is) blanco vermouth? Thank you! I'm looking forward to trying this technique, since my blender recently passed with a wisp of smoke. :D
Both the white vermouth and liqueur in the Granita recipe are sweet, and the grapefruit and orange juice are nowhere near as sour as lemon or lime so it definitely still comes out on the sweeter side!
My mother used to made a Calvados-Apple Granita that was the bomb-diggity of summer slushees. Also, it’s very much NOT summer where you are. Do most of your fans / Patreon Devine-ties live in the northern hemisphere, or did you just do this now assuming lots of us (including myself) have no nighttime view of the Southern Cross?

Love the pre-freeze method. Gotta make sure to hide it in the back, top of the freezer so the kids don't get into it.
