Excellent. Suze is more readily available than Salers. If you can find Bordiga Vermouth Bianco, it is amazing in the White Negroni. Float a lavender sprig as an aromatic garnish, and because the purple and yellow combination are photogenic.
I don’t have any Suze (yet!) but I’ve made this with Luxardo Bitter Bianco and really loved it. If you use use Dolin Blanc it’s truly a “white” (/clear) Negroni ;) UPDATE: okay, I’ve actually tried it with Suze and while they’re both good, they are *very* different and I think I prefer Suze overall in this. (Luxardo Bitter Bianco is still probably my favorite of the two liqueurs, though.). I used Malfy Lemon Gin and it was great!

Chartreuse doesn’t have the same bitterness so you’d want to use maybe try some orange bitters or something as if you still want it to lean to the bigger side. There is a cocktail called the Bijou which isn’t a mile away from that!

I like just a Suze and tonic with an orange wedge in the summer, or you can use it as you would Aperol in a Spritz for something nice and simple. Otherwise you can use it in small quantities to add a bitter edge to drinks, like a Tom Collins or gin sour 😊

Just wondering... we already have the Yellow Negroni (terrific, I got the recipe from the Difford's Guide), the White Negroni... would be a terrible sin if someone come up with the outrageous idea of a Blue Negroni? And of course, to be fancy, using Butterfly Pea Flower infused Gin (or maybe tea) instead of Blue Curacao?
@@BehindtheBar Most of my bartender friends agree with you! It's blowing my mind that it would still be called a negroni and not a martini variation but I totally get it flavor-wise.
As a bartender and negroni puritan, I will say it's a shame you made the drink in a mixing glass as Negroni is traditionally built in-glass and not stirred with ice to be diluted down like a martini or old fashioned.
Sure, I definitely do plenty of that at home and for parties! And I love getting it like that in Italy. But in a bar setting, if you’re trying to make the drink consistent and control the dilution as much as possible I do prefer serving on a big block of ice.

Cara is awesome. I've learned so much from her videos. I make my White Negroni with Salers, Plymouth, and Dolin Blanc.
Tanq 10 is my go to for picking up more of those citrus notes in amari and as a means of balance with some harsher medicinal notes. Love the vid!

Start you a booze budget, a lot of the booze comes in smaller bottles also, you only need a couple of ozs? Go small when you can

I'm afraid the vermouth will be acidic enough to turn the butterfly pea extract from blue into pink.

The original is equal parts but I find the Suze a little overpowering in that way - it’s a fun one to play with proportions though!
