Dude I had a lot of time to kill with this quarantine thing so I made my own stock, my own chili paste, and then made the carnivorous chili. I also made the roux from your Cajun episode (couldn’t find any masa harina) and dumped the chili in with some beer and 4 hours later the thickest, darkest, meatiest, most delicious chili I’ve ever had came out. Served it with some rice, sour cream, and avocados. Your videos have turned me from that idiot who burned eggs to a chili master in about 4 months.

I made this with just box veg stock and threw in a lb of beyond meat "ground beef". Followed the rest of the recipe for the most part and it was ridiculous. That chili paste is of the gods.

Made both chili’s. Added ground beef to my carnivore chili to add more meat to every bite. I also use some of the fat from the chuck roast to combine with the vegetable oil to cook the onion. With the vegetarian chili, I use both a small gold onion and a shallot in place of a large onion and I add a small handful of diced mushrooms. Biggest tip: DO NOT FORGET TO WEAR GLOVES FOR THE JALAPEÑOS! I did and it felt like I literally burnt the tips of my fingers. Also, thank you Bounty, the paper towels were especially helpful with these recipes!
I kind of combined these two recipes for the first time I ever made chili and my cousin said it was the best he ever had and actually asked for the recipe, so I think you had some amazing base recipes

When I was a kid, maybe like 14, I was helping my mom make Thanksgiving dinner and I was using the slicer for the veggies and slicing as fast as I could because it was fun and I suddenly noticed that the vegetables were coming out of the slicer with a nice coating of red and I didn’t know what that was until I also noticed my hand coated in a shimmering, sticky red substance that was gushing from the end of my finger, which I had sliced off. But then Bounty came in and saved the day! Cleaned the blood right up with their small but powerful picker-upper! The think slice of skin lying next to the ruined mixed veggies was gone in a jiffy! This is the third video that came up when i searched for chili recipe. I'm a vegetarian so i was going to look for a vegetarian recipe after i figure out what the authentic dish actually is. I just instinctively clicked on this one and im So. Darn. Glad. I did!!! I understand what the original dish is pretty well and I got a wonderful vegetarian recipe as a bonus! This is the perfect time of the year for chili... My most fondest memory was when I was 14. My mom had a get together, my friend and his parents came over and my mom served tater tots and chili... I combined a bowl with tater tots and chili, it was the best thing I had during the fall. I miss that time so much.

This episode caused me to go on a week-long educational rampage about dried whole chilies, which I'd never really used in anything. This culminated in me coughing out one of the best batches of chili I've ever made, as well as a 4-chile salsa that I can just drink straight. Thanks!
@Nikamethyst mine go off if I don't have the overheard fan on if I take too long scrambling eggs. May just look up oven roasting them, or using a grill outside once winter has passed.
@@jlshel42 grill a whole bunch outside, clean, then can or freeze them. I've used one of those vacuum sealers to portion them out easier for freezing. Just remember to mark what kind of peppers they were, because nothing's more surprising than realizing you've dumped in a whole bunch of jalapeno instead of anaheim.
@@jlshel42 so, Im from New Mexico. In the fall, we all roast green chiles, and every grocery store mass roasts them for you, by using a tumbler over a fire. We just grill them over hot charcoal, but honestly since we use so much we buy roasted stuff in bulk. No joke, many new mexicans buy a lot of chile to last through the year. Like a lot. We bought something like over 100 pounds of the stuff, but we eat it every day, multiple times a day. It has to be done outside I think, but man does it smell good
Made your chili paste with arbols, anchos, chipotles, and one habernero but steeped with beef broth. For the chili part I used a roast as you did and half a pound of ground beef. Cooked some minced garlic in the leftover beef stuff. Added my special chili seasoning (basically onion powder, cumin, cinnamon, sugar, black pepper, salt, basil, and some crushed red pepper.). Two tablespoons tomatoe paste, and half a can of drpepper. During the last 5 minutes I put 5 semi sweet chocolate chips. Best chili I ever made.

@@cactusbread2215 you can fry whole smashed garlic in oil at the beginning of the cooking process and then take them out once they've imparted their flavour like the Italians do! All the flavour and no garlic chunks. Good luck! :)

The poor Italians that moved to the US for a better life brought it over and included it in their cuisine far more often than the Italians left in Italy did. It isn't looked at in quite the same way these days, but some Italians still scoff at its overuse.

Made both chili’s. Added ground beef to my carnivore chili to add more meat to every bite. I also use some of the fat from the chuck roast to combine with the vegetable oil to cook the onion.
With the vegetarian chili, I use both a small gold onion and a shallot in place of a large onion and I add a small handful of diced mushrooms.
Biggest tip: DO NOT FORGET TO WEAR GLOVES FOR THE JALAPEÑOS!
I did and it felt like I literally burnt the tips of my fingers. Also, thank you Bounty, the paper towels were especially helpful with these recipes!

When I was a kid, maybe like 14, I was helping my mom make Thanksgiving dinner and I was using the slicer for the veggies and slicing as fast as I could because it was fun and I suddenly noticed that the vegetables were coming out of the slicer with a nice coating of red and I didn’t know what that was until I also noticed my hand coated in a shimmering, sticky red substance that was gushing from the end of my finger, which I had sliced off.

This is the third video that came up when i searched for chili recipe. I'm a vegetarian so i was going to look for a vegetarian recipe after i figure out what the authentic dish actually is. As a vegetarian, I get a little teary-eyed every time Andrew features a vegetarian recipe I can accurately recreate without needing to leave out or sub anything. I'd love to see more of these.

@Nikamethyst mine go off if I don't have the overheard fan on if I take too long scrambling eggs. May just look up oven roasting them, or using a grill outside once winter has passed.
@@jlshel42 grill a whole bunch outside, clean, then can or freeze them. I've used one of those vacuum sealers to portion them out easier for freezing. Just remember to mark what kind of peppers they were, because nothing's more surprising than realizing you've dumped in a whole bunch of jalapeno instead of anaheim.

@@jlshel42 so, Im from New Mexico. In the fall, we all roast green chiles, and every grocery store mass roasts them for you, by using a tumbler over a fire. We just grill them over hot charcoal, but honestly since we use so much we buy roasted stuff in bulk. No joke, many new mexicans buy a lot of chile to last through the year. Like a lot. We bought something like over 100 pounds of the stuff, but we eat it every day, multiple times a day. It has to be done outside I think, but man does it smell good

Made your chili paste with arbols, anchos, chipotles, and one habernero but steeped with beef broth. For the chili part I used a roast as you did and half a pound of ground beef. Cooked some minced garlic in the leftover beef stuff. Added my special chili seasoning (basically onion powder, cumin, cinnamon, sugar, black pepper, salt, basil, and some crushed red pepper.). Two tablespoons tomatoe paste, and half a can of drpepper. During the last 5 minutes I put 5 semi sweet chocolate chips.
Best chili I ever made.
I like my vegetarian chili just a little bit spidey.

@@cactusbread2215 you can fry whole smashed garlic in oil at the beginning of the cooking process and then take them out once they've imparted their flavour like the Italians do! All the flavour and no garlic chunks. Good luck! :)

@@thisjustin7492 Garlic is very cheap and Italy viewed it as a food for poor people for a long time. The poor Italians that moved to the US for a better life brought it over and included it in their cuisine far more often than the Italians left in Italy did. It isn't looked at in quite the same way these days, but some Italians still scoff at its overuse.
