Thanks for having me man! Also the banana in Mario Kart is overpowered. There I said it.
This episode was kinda sexual ngl
Banana eh
ah yes the "banana" we know what you mean ;)
Joshua Weissman bold of you (or us) to assume you left and are not living in Andrew’s cabinets
When I've baked sourdough before I was told to spray a little bit of water on top of the loaf before putting the lid on to help create steam. Is this loaf hydrated enough to not need that? Was it a prank and not a necessary step to spray water?

His skin was damp with perspiration. He did not know if it was the heat from the oven or... something else. He tried his best to ignore the thought, to forget why he was so bothered. Something he hadn’t been aware of was blossoming, and its existence shook him to the core. He washed his hands as he cleaned off the sticky residue that covered him like a stain, marking him for what he had participated in.
He breathed in deep, exhaling slowly as he attempted to collect himself before going back into the room where it happened. He did not know how he was going to face the camera, but he knew that he could not keep the group waiting. He dabbed his face with the towel, and walked back out.
There he was, laying there, his silky curves facing him. Andrew could not look at him without the feeling swelling in him. He gulped loudly, then stepped forward. “I can do this, just keep your composure,” he told himself. He looked upon the table he lay, and came to terms with what he had done. He placed his hands on him, and with a simple motion, he began kneading. Relaxing, he looked up, and with a newfound composure, he admitted the awful truth to himself: he was hungry, and he had eaten some of the dough.
Jesus Christ..

That is both gruesome and funny at the same time 😐

Josh teaching Andrew is probably the best tutorial I could hope for.
Andrew makes very small but significant mistakes and is honest about them, and Josh gently corrects and brings it to the level necessary to make it almost perfect.
A very interesting dynamic, and a very helpful look into dough.
Baked this bread earlier this evening. After killing my starter once and watching this video about 100 times I did it and it was delicious! Well worth the hours of proofing, fermenting, stretching, watching, waiting. So proud of my little loaves!
If you're thinking it's too complicated or don't have all the necessary tools, I stored my dough in big tupperware containers instead of those little baskets and scored them with a plain old sharp knife. 10/10 will bake again (if I can keep my starter alive)
You can tell they didn't actually play mario cart because they were still talking to each other when they came back.
Nice.
Or they are just gentle men

i made this sourdough with my own starter that I made from scratch for the first time these past two days. I didn’t score deeply enough, so they came out looking a bit silly, but the texture and taste were still intact. Easily the best loaves of bread I’ve ever made. A delightful open crumb with a soft texture and a crunchy crust. I baked mine on a pizza stone (i don’t have a dutch oven) so the browning time was a bit different. Still a great result. I was initially a bit hesitant on sourdough bread because I don’t really like the “sour” flavor. But this had a nice, light yet complex flavor.
When using the pizza stone, did you adjust temps/times at all?

I love how Josh puts salt on his buttered piece before trying it. He knows what's up.
Unsalted butter is typically used in baking. That way you can control the amount of salt in the recipe.

"That's perfect, it doesn't have to be perfect"
That was a pretty solid, hard-hitting line. I'm gonna use that.
@the Earl of Oxfordshire I could use a drink... WHY IS THE RUM GONE!?!?!
I bear no grudge against my local bakery charging $7 for a loaf when seeing how much work is involved.
Making 100 is a lot less work per bread tho, but they need to earn some profit so it's justifiable
Its different bread isnt it
Baker here. If its a chain store, even if advertised 'fresh' backed bread, they are frozen dough balls that you knead, cut, spritz with water then proof. Takes like 30 seconds
Depends if your local bakery is a chain or not.
I actually went to the one around the corner from me and asked them if they had starter, since I wanted to make some sourdough myself a while back, but they only looked at me like I'm an alien, until they realized what I meant and basically just said "nah, we just get the dough as is and then bake it".
Sourdough is no joke. When I make it, it's a whole-weekend project.

Certainly gets awkward when they start talking about the anus of the bread and you're still at work.
My grandmother has more than 100 years old leaven. She inherited it from her grandmother. Although the method to make a leaven is a bit different. The base is water and flour of course. You start with 30g of flour and 30g of water, then let it sit for 24 hours. Then you add the same amount from everything to the mixture and repeat this process for 5-6 days, twice a day with a 12 hour resting period. It is called feeding.
When it's done, you can use it the same way as you guys did. However, you have to feed the leaven constantly to keep it alive. When the leaven is older, you have to feed it less. But for instance, when you take out of it, it needs a little bit more love.
