Obviously, the mod itself is insane, and so is polishing gameplay concepts around it. But the gameplay here is stupidly creative, too. I love how it's not just trying to finish levels, and gameplay mechanic is even used in innovative ways at some points.
If something like the portal gun were real, this might be closer to what it would be like than the normal game. An actual portal gun might very well produce spherical portals, and being able to put those anywhere might be what actually happens.

it's probably going to shoot portals in corners and out of bounds and lunch itself into the black box which teleports you to the next level, and the TAS will do that on repeat probably

Bunny hopping isn't even really a glitch. It was a glitch in Quake, which Half Life's engine was built off of, and despite retooling and modifying the engine, bhopping was still there. Even when Valve made Source, it still kept bunny hopping. It started as a glitch, but Source very clearly intentionally includes it, since the modification needed to disable it is really easy to implement, as proven by several mods, and even other games based on the Quake engine outside of Valve's titles.
I was thinking about it, and Portal 1 is very 2D, with only slight changes in elevation to spice up some puzzles, Portal 2 adds a lot of omnidirectional features like gravity lifts, a gel that propell you up, lasers that come from different directions. So Portal 3 will be made when we discover the 4th dimension
I saw someone in your chat say "Play this in Mel" and I think that could be a cool thing where you have a menu to choose which portal 2 type you play it in, Portal 2 or Stories Mel.
One change that I'd love to see tested: Portal gun designed to work like TF2's Loose Cannon. Portal goes further, but by holding it you can make it appear closer like "charging" it.

spherical portals would distort everything that comes though them because of the difference between the «input» surface and the «output» one

They are not spherical, they are holes, a 3d hole appears spherical because it is a circle when perceived from any angle
black mesa uses spherical portals
