Basically, when air (which is considered a fluid) passes over a ball, it sticks to the grooves so that it can pass relatively linearly over the ball. BUT, when the surface is too smooth, the airflow unsticks from the ball and creates "chaotic flow" (basically just turbulence) When the air unsticks the ball swerves, its quite literally a knuckleball effect. Its the same reason that when a knuckleball is thrown or kicked you cant predict where the ball will shift too. Interesting stuff fr
