I’m a Wisconsin Whitetail Hunter and you can hunt with me anyday. You processed that deer fast as ever! I guess in 100 degree temps you have no choice! In WI we can leave our deer hanging up for days before we butcher it due to the cold weather!
So many hunters I know and respect still discard the heart…I can never under stand why. Every time I introduce someone to heart meat of any wild game hunter or not they love it! It is the first piece of meat I eat from a harvested animal! Love my some pan fried heart!

Neck and ribs always get looked over, i clean it all, you harvested it - eat it all! The ole neck twist and pull with some good cuts takes some time to learn but once you do... so much more meat.
I use the golf ball method. I have carpal tunnel from years of death metal guitar playing and other stuff. I make my cuts in the front like you, tie a rope around it and just slowly move the truck forward. Comes off like a glove. Also, I love the heart and liver! I don't use a breading on mine. I just straight season, and throw in beef tallow or bacon grease. Dat's money dude!

But when I told it to guys in the plant, in the 80's, they looked at me like I had 16 a**holes on my forehead!!!! Well I did it in front of my friend using a rock. He said "I'm glad you did that because I thought you were full of sh*t!"! I said "that's why I did it"!!!

I do at least 10 a year with family...best advice I have is to use a butt out, and have your hoist already set...using an electric winch with a couple of suspended pulleys works wonders. I hang by the neck, and use a branch trimmers to cut off each leg just above the knee. Pull whole hide off
The real question is who does it better, stalekracker or the cracker assistant?? Makes me laugh how he hits back at those comments saying he isn't doing it right, I've butchered many deer I've shot in the field and at home, thats exactly how I skin roe deer here in the UK, and it's always worked for me!!!

Ya, leaving it hang a few days when possible also makes it way more tender. That’s how we do it in Oregon.

Up here in Wisconsin my grandfather pickled deer hearts and would bring jars of it to deer camp. Delicious 😋 I too would put that on a kracker.
