These look great I really liked your Jiffy Mix recipes showing several ways to use one product. When you live on a limited income being able to use your items more than one way is a blessing for sure.
When I make any type of Mexican dishes or casseroles, I make oven baked tortilla strips to top the dishes. I cut them super thin, lightly spray with non-stick spray and bake at 350 until crispy. (Keep an eye on them!) You can dust them with a little taco seasoning for a little added flavor and color. They add crunch and just make the plating beautiful! Thanks for the recipes and for giving Gracie cheese!🥰🥰❤️❤️
Oh my goodness girl! The Chicken Enchilada Rice Casserole was a complete Hit my Family loved it, love it, love it, love it!!!👍 I did include the 3 other ingredients you recommended the taco seasoning, can of green chiles, and the hot Cholula, (that was the part I didn't know how much to add) but, if it wasn't to spicy they just added more. I made the chicken rice dish with leftover steak instead of chicken. We loved it and with leftovers I wrapped up in tortillas and froze for quick lunches.

I made the enchilada chicken rice casserole for dinner tonight! It was delicious 🤤 I added some Worcestershire Sauce to the mix. (In UK/Ireland we just say ‘Wooster’ sauce) 😁

A really simple yet yummy white sauce I make to go over my enchiladas is....Puree one jar of Pace Picante sauce , add about 1to11/2 cups of sour cream, add enough heavy whipping cream until desired consistency. Add salt and pepper to taste. Sometimes I add a bit of taco seasoning. In addition to pouring it over my enchiladas before baking, I also use it to drizzle over any Mexican inspired dish in place of sour cream or crema. When using for other things I usually omit the heavy whipping cream so it is thicker like dip. Hope you like it if you try it.

I made the cheesy chicken enchiladas for supper last night we really liked them. .. The cheese sauce is really good 😋 The only thing I did different was . I sauteed onions and chopped tomatoes to put in my tortillas with the chicken and the mozzarella

I make my chicken enchiladas pretty much like you did. The only change is I use corn tortillas and I give them a quick fry. My husband will not eat flour tortillas. So I know that recipe is good.
My Fur Baby likes to hang in the kitchen to!! He loves cheese, chicken, sometimes onion!! I like a lot of the dishes you just fixed with the chicken !!
I've been making the white chili for years, we always called it soup. My only difference is I also dice green onions in it. I serve it topped with a dolup of sour cream, little more diced green onion and shredded cheese.
Have you ever thought about doing a meal plan program? I believe you would do well on it. A simple shopping list, tips you have, I think you could make a bit of $$ doing it.

My corgi comes running from anywhere (including a dead sleep) when she hears the bag of shredded cheese! I always sprinkle a little on the floor for her to hunt up 😊 also a dollop of sour cream on the tater top casserole will cut the spicy down

I cook the white enchilada, but I use 2 can cream chicken soup and 1 cup sour cream and on can of green chillies, everthing else is the same as this one, so yummy..

One person here and i hate left overs so i take good meals put them in those 3 divider trays freeze them with sides yum. Another day 👍
