  • Welcome to a very special edition of What's for Dinner! This week has been chaotic with a ton of different appointments and errands that end right around dinner time, so filming was out of the question. BUT, I've heard from several of you recently - asking what our family favorites are. Well, here you go! We definitely have more than just these 5 dinners, but I didn't want to make a 2 hour long video, LOL. If you would like to hear about more meals that we continue to make over and over again, let me know in the comments! As always, I've got the recipes linked below for you!     COLE'S FAV - MEXICAN ALFREDO:
    1 Tbsp Olive Oil
    Chicken Sausage - chopped
    1 lb. pasta (we used penne)
    Alfredo sauce (1 jar)
    1 cup of shredded cheese
    3 Tbsp Taco Seasoning
    Cook pasta to al dente, drain and set aside. Heat a large skillet to med-high and add oil. Add chicken sausage and brown for just about 3-4 minutes. Add alfredo sauce and taco seasoning. Stir to combine. Allow to heat thru for about 3-4 minutes. Add cheese, stirring to help it melt. Add drained pasta and stir to combine. Serve and enjoy!

    My son watched this video with me. We've made our ribs like this for years, and you so right! They are the best! But when my son saw the pork sandwiches and the chicken and orzo he begged me to get the recipes and make them. I think you've garnered another fan, Mandy! 🙂

    Oh my goodness. I had hit the like button early in the video but with each meal I kept trying to hit it again. Each meal looked soooo good. Loved how your husband was so detailed in describing the dishes. Wow. I wouldn't be surprised if people just "accidentally" randomly stopped over to your house at dinner time.

    I use to use that Jar of Alfredo sauce until I started making my own from scratch and its heavenly! I got the copy cat Alfredo sauce from olive garden and I been making my own ever since. Im not too big on the jar stuff so I decided to find a new recipe.

    If I could offer an idea for the ribs, while you’re doing the slow cook, add some apple juice to the pan and brown sugar then make your same bbq sauce with the drippings and juice. It’ll change your life I promise!! The way your cooking them I know your thought is they couldn’t get better but I’m telling you apple juice!! 🤯 it’ll blow your mind

    Yep Mandy, I used to make Ribs like this in the Oven and they're a winner!😋😋😋 They're easy, and they're fool proof.

      Not for me 😂😂😂 I had them in at 275 for 3 hours 45 mins. My meat thermometer kept telling me the temp was 184 not tender enough. Back in then went for 20 mins more and now they’re to tough. Never again, I’ll stick to my husband smoking them.

    I tried the Mexican Alfredo tonight with a couple of adjustments. Our son loves Cajun Chicken Pasta at a couple of different restaurants we frequent. So... I used Creole Seasoning instead of taco seasoning. I used Tony Chachere's mild version. I also used bite-sized chicken breast rather than sausage. I seasoned the meat with two teaspoons of the seasoning as it was cooking and added some green onions for a bit more flavor (besides, they needed to be used!). I put in some parmesan cheese and some mozzarella cheese in also. The amount I used is hard to tell, again, I just used the ends of their respective bags. It may have been a quarter to a half cup of each. We liked it. The flavor wasn't too hot, but just enough kick. Thanks for sharing this recipe as a kick-start to our dinner tonight! Dana

      Would you say orzo is similar to making pasta or rice? I’ve never made it but I am dying to try your orzo salad with all the olives tomatoes and feta cheese

      laura holland Orzo has been hard for me to find recently due to the pandemic, the little stars pasta from soup or Mexican food aisle is a good substitute.

    I’ve found the easiest way to make ribs is in the pressure cooker and finished off under the broiler! Especially for these hot summer days 🥵

    Mandy i almost fell in the floor i was watching the vedio of the chicken with Pepperidge farm bread crums. Steven cut onto the chicken it squirted then he went to cut again it squirted again.     I’m watching some of your random videos, because this is my new favorite channel for new recipes!! You have so many good ones! That butter chicken is almost the same as chicken piccata which is one of my favorites, so I’m going to try your recipe this week. Actually, I’m going to try all of these favorites in this video! :) Since you leave so many good tips, I always want to leave you one, if I have one. On the fish, if you have a fishy tasting fish, or fresh caught, you can soak it in cold salt water, in the fridge for up to 3 days before cooking. The fishier, the more days. Each morning, you’ll rinse the fish, and replace with fresh cold salt water. Just like a TBSP of salt. I’m just like you, and I won’t eat fishy tasting fish, and we do a lot of fishing. My favorite is catfish, which can be fishy, but with this soaking method, it tastes like a Walleye or a mild ocean fish every time.:) Hopefully that helps someone! Take care & God Bless!! 🙏🏼

    Also, Swiss chard is easy to grow. Let one plant bolt, drop it's seeds, and replant in a row. Also just harvest the outside leaves to extend your harvest.

    I was blessed with 5 huge packages of ribs 50 percent off. I'm 60 and have never made these. Thank you for sharing. My dad warned me they need to be cooked slowly.... I always love how you improvise with ingredients.

    In my beloved home state, there's a small family-owned restaurant that serves cod cooked this way, and they make their own dill tartar sauce. I'm very sure, though, they never put sugar into it--I never thought of doing that, but am going to when I cook cod again (my all time favorite fish!) That is one mighty appealing meal---they all were---and I've got some great ideas now for how to amp up my usually too-simple meals.
    I only discovered your channel a few days ago, Mandy, and have been binge watching. I enjoy a number of cooking channels, especially ones that show how to make meals that are very good, but aren't necessarily expensive. I cook only for myself now, and I live on a retirement budget, but man, I do enjoy good food, so your channel is going to be one of my "go to" sources for such food and cooking ideas.

    Made those ribs today and they are to die for. Will never make them any other way or go back to bottled bbq sauce. And so easy. Literally the best ribs I’ve ever had. I used baby back ribs and did 3 1/2 hr at 250°.

    I just made the Mexican Alfredo pasta last night for dinner and it was phenomenal! I used chorizo sausage and don’t think I’d ever try another protein because it was so perfect. I’d encourage anyone who wants to try this recipe to try using the chorizo. It adds a wonderful spice to the dish.

    Loved this episode! I have a tip, if you don’t already know it by now. 😊 When you have to use a hand mixer and you don’t have that extra hand to steady the bowl (as seen in this video), take a dish towel, or larger, depending on the size of the bowl, and wrap it around the base of the bowl, nesting it. The bowl won’t shift and you can stir away without chasing the bowl!! 😊

    That was a particularly fun video. I loved the Cole got in on the cooking action. I think all young men should know how to make at least 3 meals they love before they leave home!
    Do you ever use a meat thermometer off camera? Because you sure seem to get it right Everytime. My mom was like that, but I just can't seem to get it right! I'm 53, and you are teaching me so much! My mother grandmother and Aunts were all great southern cooks, and I always seemed to be too busy to learn. Makes me really sad now. Bit I've got you,!😁

      That's such a good idea about young men (and women too) learning their favorite things before they leave home. You never know who will end up doing the bulk of the cooking once they settle down. I was raised by my aunt and uncle and even though their relationship was very old fashioned, my uncle did most of the cooking.

    Love, love your what’s for dinner videos. My husband loves your beef stew recipe. Before your recipe I made beef stew that was requested often . Our neighbor when we lived in Florida would drop by at supper time on Saturday nights hoping I made beef stew. Friends have requested my beef stew recipe. Honestly your beef stew is better.

    Mandy I just made the Lemon Butter Chicken and the orzo! WOW!! So good. My husband and I always cook up something on Fridays for lunch. This was delicious. Thank you! ❤❤
