  • This time, SAMURAI Chef will introduce Japanese Vegetable soup.
    When you make vegetables into soup, you can get all the nutrients dissolved in the soup. The key point is that simmering reduces the bulk, reduces bitterness and harshness, and makes it easier to eat.
    【INGREDIENTS】
    One third Carrot
    One third Sweet potato
    Half Onion
    Appropriate amount Cabbage
    1 clove of garlic
    One Tomato
    A piece of kelp
    5g Bonito flakes
    15g Sake
    10g olive oil
    Appropriate amount of salt
    Appropriate amount of pepper

    Thank you so much for this amazing recipe! I love how the vegetables are cut nicely and precisely. Also enjoy and appreciate the explanations. Can you please tell why you peel the carrots? It is known that the first layers of the peel contain the greatest source of nutrients.

      Regarding the carrots, you’re absolutely right that the peel contains a lot of nutrients.
      In this recipe, I peeled the carrots for aesthetic and texture purposes, as the smoother surface works well for certain dishes.
      However, if you’d like to keep the peel for its nutritional value, it’s definitely a great option! Just make sure to wash the carrots thoroughly.

      Great question! You can use chicken stock , granulated chicken stock, or 'Hon Dashi' as alternatives to bonito flakes. If you can get 'Hon Dashi' (the convenient instant dashi powder), it’s a great substitute and adds a nice umami flavor!

      For the substitute of bonito flakes, you can use chicken broth, white dashi, or other umami-rich options. As for the sake, you can replace it with white wine or mirin for a similar depth of flavor!

    U added rubber band wrapped bonito into boiling hot water🥴🥴. That’s already carcinogenic

      The rubber we use is made from the resin of rubber trees and is safe to use in cooking as it meets food sanitation tests by the manufacturer. However, as you pointed out, there may be some rubber from other manufacturers that is not the same. Thank you for letting us know. We will also add this information in the video subtitles.

      I wouldn't put rubberband in cooking hot soup too. Not a chef myself but based on science research.

      @@samukichiJFS Food Grade Rubber Bands not easy to find in some country and who are not in food industry may not know this information.

    I would suggest not to use a rubber band since it's going into hot boiling water. Using safe twine should be okay. The bonito can be skipped for vegetarians. The sake too can be skipped. And the Japanese don't generally use olive oil in their cuisine. They only use it in western dishes. This soup contains seaweed and bonito. Weird to use olive oil. Can use vegetable oil or rice bran oil instead.
