    Fun fact, the word ‘hummus’ in Arabic (حمص) technically just means ‘chickpeas’. The full name of the dish is actually ‘hummus bil-tahine’ (حمص بالطحينة) which means ‘chickpeas with tahini’.
    This is actually a recipe that can be found all the way back in a 14th century cookbook from Aleppo, although that version used vinegar instead of lemon juice and it also added many different herbs and spices to the mix as well. But it’s crazy to think this is a dish that goes back at least 700 years!

    Mary!! OH. MY. Gosh! This hummus is PERFECT! I stopped making my own because I never liked the consistency as much as the restaurant hummus. I made it today, boiling canned chick peas and blended exactly like you said. Everyone wants to know where I bought it. It's DELICIOUS...Smooth & Creamy! :) Thank you SO much!!!

    As I was born in Belgrade (former Yugoslavia) I can tell you that in many homes the peels actually stay on the chickpeas! Depending on how strong your blender is, this actually makes for an even smoother humus, plus it holds lots of fiber and nutrients that you would throw out when removing them. Honestly, you should compare the two. I think it even tastes better with the blended peels. Also, my family recipes are really really old (dating from the year 700 as they say) and they used to add fresh cumin, fresh coriander and fresh fenugreek (not fennel) when blending it. So not as dried powders, and they roasted the garlic in olive oil before adding it to blend in with the rest. The humus gets just as creamy in my opinion. Either way, so many cultures so many recipes. The older blenders made in Soviet times previous century were really strong, with super sharp blades in them. They have no issues with chickpea peels at all, grinding them to powder state is no hard thing..

    Thank you Mary for another fabulous video! By the way--I use my regular old blender (not a high speed one) to make my hummus and my tip for people who use a regular speed blender is to mash the chick peas with a potato masher in a bowl first and then place them in the blender.... this makes blending them much easier! Hope this helps and thank you again!

    Just made this today and OMG it was delicious! I had a can of chickpeas in my pantry for a year because I had made hummus a year ago and didn't like how lumpy and grainy it was so the extra cans just sat there. I had lemon juice already in my refrigerator so I just had to purchase tahini (thanks Mary, found next to PB at HEB just like you told me). Whipped up everything in my Nutribullet for 2 min and it was so creamy! I like garlic, so added 4 cloves of garlic and bought HEB garlic crackers, found in deli section, and I was in heaven!!

    I make Hummus fairly often & sometimes I don't have tahini on hand, no problem, I just substitute it with the same amount of peanut butter. Also, to get some flavor variety, I'll toss in some chopped onions, jalapenos, or avocado. Other times I'll hold back some of the olive oil and use a bit of toasted sesame oil or hot chili oil or even some Red Hot sauce to punch up the flavor. Then there was the time I really wanted hummus but I didn't have chick peas so I used white Cannellini beans instead. technically not hummus but still pretty darn good. Besides using it as a dip, I'll also use it as a sandwich spread, just last night I made BLTs for dinner & instead of mayonnaise I used hummus on the sandwiches.

    More tips...
    You can freeze the soaked beans and cook them later. They cook faster and get really soft. Or, you can freeze them after cooking and warm them before making hummus.
    I use some of the liquid after the beans are cooked instead of water or ice cubes. Adds nice flavor.
    To thicken hummus add a little more tehini .

    I add a whole bunch of cilantro in my hummus along with half a large red bell pepper and jalapeño and some extra seasoning like cumin and paprika along with all the other stuff you mentioned besides the ice cubes. Thanks for sharing your version I’m always enjoying trying other people’s recipes as well!

    Hummus is one of my favorite dishes. Last time I time I made it I used ice cubes like you suggest. Enjoy the you break everything down and explain the why of doing things. Now I want hummus 😏 I was just talking with my son's girlfriend the other day and telling her we didn't have shelled pistachios when I was growing up. Also a lot of times we could only get the ones that were dyed red.

    That's how we make it in Palestine. My mother used a trick to peel off the skin I think when she boiled it she added baking soda and it made all skin flow to the top, but you're right I think peeling the skins is what makes it soft and creamy.

    In Israel hummus is served for breakfast topped with only zaatar (oregano, thyme, and sumac) and whole chickpeas... so good! Thank you for awesome tips! Though I have never added water to hummus I do spend alot of time rubbing the chickpeas in a towel to remove skins. Not any more!💜

    I've made homemade hummus before, but definitely going to try this version (I'm lazy, I'd just rinse a can of chickpeas, dump 'em in my blender w/some tahini, garlic, oil, lemon & salt, and be done with it all. Never thought about cooking the beans first! Hm... 🤔

    Hi Mary! I am going to try to make hummus but I can't have chickpeas even though I love hummus. So I found a Keto friendly recipe and I will make that using your tips because I want a smooth dip and the Dukkah as that is all Keto friendly. Thanks for your videos and all your wonderful advise.     I found your channel recently, absolutely love it! I searched but couldn't find it...have you ever shown making homemade refried beans? The cans are so expensive here in Canada and I know it must be easy to do, something similar to hummus. I tried once and they didn't get smooth but I think removing the skins on the pinto beans would help refried beans too!

    I actually make my hummus the same but leave the skins on and cook my chickpeas in my instant pot on the beans setting, I like a more lemony, garlicky taste so add extra of those.
    I freeze my leftover chickpeas in 400gm lots to use for next time.
    I used to make it with tinned chickpeas and then bought a 4kg bag of dried from Costco, I highly recommend making it from dried over tinned because you get double the amount of hummus once processed than what you do with tinned so it makes it even cheaper to make, I use the same amount per weight, 400gm tinned V 400gm cooked dried and get double the finished product.
    Its beautiful as a butter substitute also or on the base of crackers topped with ham, cheese, tomato etc
    I love it, I live in Australia and watch quite of lot of Americans on UA-cam and get heaps of canning etc tips, I’ve got an instant pot and a pressure canner and I make my own yoghurt also, just watched your cream cheese video so will give that a go 😊, I make my own baked beans also, but tomorrow I will make some to can, in tomato sauce, then I’ll do them in ham sauce, I make ham at the moment but I freeze them, this time I’ll can them.
    Heaps of different things I want to do, oh I’ve got a dehydrator also 😂 can’t afford a freeze dryer though 😢

    You can buy Dukkah from many Middle Eastern stores. However, home made is much better.
    I often brown pine nuts in gee or olive oil and pour it onto the hummus.

    Mary, do you remember Graham Kerr, "The Galloping Gourmet?" I have been making hummus ever since his 1980s series "The Frugal Gourmet" in which he added cilantro and a little cayenne pepper. Of course, as seen on supermarket shelves, you can add a myriad of ingredients and flavors but I encourage you to try this. I am a cilantro fanatic to begin with but I'm sure you'll love it.
    THANK you for you're father's favorite topping. I am SO going to try it. I occasionally use "Everything Bagel Toppings" but your dukkha looks and sounds awesome!

    I went to two different pronunciation sites. One pronounced dukkha as DOO-kuh. The other said DUH-kuh. Your pronunciation is fine, Mary. :-)

      I tried that, but the sesame oil, ( although wonderful for many applications) didn't impart much sesame flavor like tahini does. Turned out to be a waste of good sesame oil

    Looks yummy. I’ve never made Hummus- but I’ll give this a try. I’m not crazy about the taste of the extra virgin olive oil everyone seems to use. What kind of olive oil did you use on top? Can you recommend a brand that is mild? Have you done a video on the differences are in Olive oils? I just don’t know what to look for at the store, and they are so expensive. I don’t want to buy a bottle and find out I hate it.

      Hi Maggie, I understand completely. Extra Virgin Olive Oil - which I like - does have a bit of a peppery bite to it. I do buy an Italian version at my grocery store when they run a special but generally I buy olive oil from California (Bariani) or usually from right here in the Texas Hill Country. Yes, we have olive "ranches" here - as they are called! LOL!! Generally I don't recommend lower grade olive oils - however - they do have a more mild flavor. But you do not need to use olive oil on hummus. You can leave it plain or you can try using un-toasted sesame oil which is mild and delicious. It's also a heart healthy oil. Hope this helps.     I once read that it is unsafe to boil garbanzo beans in the vicinity of caged birds, such as canaries. I do not know if this is a fact, however I thought I'd give a head's up, just in case. I can't wait to try this recipe!
