      chavellat - that’s a great question. And I just made a video about creme fraiche which should be edited and uploaded in a few weeks! To make creme fraiche with pasteurized milk or ultra-pasteurized milk, you culture 8 ounces of heavy whipping cream with 2 tablespoons of buttermilk. Allow it to thicken...it can take from 12-24 hours...and you have creme fraiche. That will make about a cup or so of creme fraiche. Hope this helps.

    Mary, I made the plain butter this morning with heavy whipping cream. I was so excited. So far I have made mayonnaise and the L reuteri yogurt.I am so thankful for you. I especially like the way you say not to worry if you don't have everything exact. It allows me to experiment and not be too hard on myself. You are a blessing from God and I just love you!!!

    I am an old man. Makes me chuckle how young folks think they have discovered old ways as if they were new. At Grannies log cabin, we used the old milk from the cows to make butter. Milk was kept in a spring house trough at about 55 deg. Yes, it soured pretty quickly. Was not nearly so complicated to make. It was all we had ever known. Then we discovered sweet cream butter. Oh, the old butter lasted much longer in winter than your prediction, tough it did taste stronger. Now days, where I live, one can not even buy unpasteurized milk. You have to own at least a share in a cow! Thank-You! Just passing on some memories!!!

      @@MarysNest Some people like margarine (grrr, plastic butter substitute?) At best I would call margarine “spread” and butter “butter”. No matter how poor I could be I would always have butter!!!

    I absolutely adore the way you teach! All the "or you could" directions allow for people from any circumstance to manage doing these wonderful things! As an older, practiced cook of 68yrs, I have learned many ways to accomplish a task. Substituting ingredients and even methods can certainly broaden your abilities, can't it? Thank you for these wonderfully informative videos, and I also appreciate the way you take the time to offer advice/adjustments for people who may not have access to the ideal ingredients or equipment. You're out here doing the good work of making real cooking and real food accessible to people who otherwise would be excluded.
    Also - and I hope you don't take offense to this - but I feel like you're the absolutely optimal blend of Ina Garten and someone like Bob Ross or Mr. Rogers. I love it!

    Hi Mary, I live in India. Love your recipes. I'm gonna try this one cause though I live in a megacity, there is a cattle shed nearby that sells freshly milked unpasteurized milk every morning. Hope it turns out well for me. The kids are crazy about butter. Thanks again.

      My granny did the same with us 3 kids and Smokey, her wee doggie,. Smokey would get tired out as well cuz he thought it was a great game chasing the jar while we were rolling it. Our treat was always homemade ice cream & if we were good, we got to take turns standing on the chair and cranking the ice cream maker on the kitchen counter. Not sure who had the most fun.. us, Smokey, or grandma. My grandparents lived on-site at a reformatory for wayward boys. It was self sustaining. Grandma worked in the kitchen and grandpa taught auto mechanics. Every morning she got an old fashioned milk container of fresh whole milk and a huge bag of whatever vegetables were ready at the time. Such lovely sweet memories.

    Little tip for Mary's nest followers, small mouth canning jars are comparable with most brand blue capped mayo jars. If anyone out there knows what fits a wide mouth let me know. I usually test all kinds of caps to see what else they fit.

    Hi Mary, I made butter today, watching your video ( I made uncultured), you do an absolutely brilliant job of being the best teacher !
    I live in the UK, and at the minute, butter is so so expensive !
    You are so knowledgeable, and have a wonderful calm way of showing each element of what you are making, which makes it a stress free and an enjoyable experience .
    I love cooking from scratch , as you know exactly what goes into everything you make, and the end result of whatever it is you’ve made, is such a wonderful feeling !

    I’ve made butter in the past and it’s quite tasty, but never have I made cultured butter. I have a little over a gallon on my counter right now that I will making butter with in a couple hours. I’m super excited! I am doing a bunch of holiday baking this year for friends and family and can’t wait to use my homemade butter, as well as my homemade vanilla extract. Your videos are wonderful!     I don’t know if you will see these comments, because I have been going back in time and watching your past videos. I don’t want to miss a one, as I’m fairly new to you channel. But I love this video. My dad has long passed away, but when growing up he was a dairyman. What a blessing that was in our life. None of my friends had such fun dairy products as we did. They always wanted to come to my house to play so they could have little cartons of chocolate milk, little Dixie cups of ice cream, ice cream sticks...and on and on. When my dad would get a batch of outdated milk, my mother always made butter. Then she would make homemade bread and raspberry jam and oh my goodness. Thank you for your most enjoyable video.

      I meant to say outdated cream, not milk. But we lived on dated dairy products, because they were still good when they were outdated for quite awhile. We had a great life growing up!

    I have been making cultured butter from raw cream for years. I make all my butter for the entire year in April, May, June when the cows are on the new rapid growing green grass. If you are familiar with the Weston Price Foundation, you will know that this is the time when the butter is much healthier for your body- much higher Vitamin K content. I freeze all my butter in little round glass tubs. When April rolls around each year, I am just finishing up my butter from the previous spring. Never have I had any sort of problem with freezing my butter for over a year.
    I also would recommend skipping the step of using the cloth for straining. I just use a fine mesh sieve and am careful not to squeeze or press the butter while it is in the sieve. That way I do not lose any of my precious butter in the sieve. Then I use a shallow plate/bowl to dump the butter in after straining out most of the buttermilk. Then I press out the rest of the buttermilk and add it to my jar that I also freeze for use during the entire year. I then wash my butter under a slow drizzle of tap water. (comes from my well, chlorine-free), while I am pressing until the water runs clear. My second of 2 ingredients is salt. I do prefer my butter salted. Yum! I consider this one of the most healthy nutrient dense parts of my diet and spread it lavishly on my toasted sourdough rye bread that I make.

    In Morocco. We ferment real raw cow butter. We wash it first with clean water until it’s crystal clear. Then we mix it with good salt like Himalayan salt and we store it for at least six month to ferment and it turns into something we call Smen. Smen is a food and medicine.

    I just wanted to thank you on your video on making cultured butter. I made it today. It came out. Awesome it is delicious. You’re absolutely right. There’s nothing like homemade. I am so glad I stumbled on to your videos. You are truly a pioneer woman. You are so good in traditional cooking methods. The only difference between my butter and yours as I don’t have a KitchenAid mixer so I used my KitchenAid food processor. I can’t believe how quick it made the butter I don’t even think it took five minutes. It was less than that. The hardest part for me was squeezing out the bottom milk at the very end but I did it. Thank you so much honestly❤❤👍

    My wife and I made this one too! It is in the fridge getting cold now! I am a bit shocked at how "sour" it is after 24 hours. We may cut it back to 18 on our next run! This is already an amazing butter though that we are going to be so proud to serve to our parents and children!

    We make butter in jars all the time. Love it. I even made it in my whip cream maker at Christmas. So much yummier than store bought

    When I was a kid we had a big round jar and my brother and I would make butter by rolling it under our feet while watching TV or booting it back and forth across the carpet to each other with our stocking feet.

      Yep! I used to sit on the floor and roll the jar back and forth with my daughter when she was pretty little. Fun game, like rolling a ball back and forth but we got GOOD butter. We used straight straight up from the cow in the barn milk. I don't remember letting the cream separate. Oh gosh, too long ago.

    Mary! I just wanted you to know that I like your method of how to make butter then all the previous videos that I’ve watched. Yours is totally hands-free. And I like that you use very cold water to release anymore butter milk that is left in the butter.     I made butter for the first time the other day and it was fun and the butter was very creamy but not that different than store bought.
    I’m looking forward to trying this method with cultured butter.

    In my childhood, we didn't get any pasturized milk. It was raw, daily. It was boiled and the cream on top was added to this permanent container that had yogurt culture in it passed down generations. It got processed every week or two into butter and buttermilk, but it was always super tangy. It took a while to be able to see the world and find out that there's such a thing as sweet butter.

    Organic Valley makes a great heavy whipping cream but unfortunately, our store only carries the ultra pasteurized, which is a bummer. BUT, at least I always have my own milk kefir on hand. While I have made butter before, I have never made or even tried cultured butter so this is very interesting and I am just going to have to try this! Thanks for another great teaching video Mary!

But at least if that is all they have access to, they can culture it to improve the nutrition. I'm so happy you have your own milk kefir.     This lady is just delightful. I enjoyed her accent, presence, voice, tone and personality. What a lovely smile. I just use the mason jar shake technique with my cream from the top of my raw milk. I also use the cream for my coffee. Ive had salted butter stay fresh for 5-6 weeks. Very good point about using previous buttermilk to culture the next batch. Great video and wonderful approach!

    Thank you so much for all of your lessons!!! I don't remember my Norwegian grandma going to so much trouble rinsing every bit of buttermilk out of the butter. ( I understand doing so keeps it from going rancid) Maybe because she made cultured butter everyday while bread (also made every day) was baking and they only lasted one day? Also, I forgot I was culturing the 32oz of heavy cream with my home made kefir yesterday and this morning it was completely solid! But, the b-milk and butter are soooooo good. I'll do it deliberately next time!

    I MADE IT. It was not as simple b/c of my mixer spattering and splashing. It had sat for years and I couldn't tell what speed I had it on. I finally ended up with butter. I DRANK the buttermilk -- oh, it was so delicious. I'm looking forward to make cheeses and bread and other things. Is there a recipe for EXTRA SHARP cheddar? When I was in Europe the couple I visited had a five gallon bucket of cheese in their closet. I can't remember the name of it -- but, it was the tastiest cheese. I asked for it with every meal. Maybe it was cream cheese? It was not hard, but soft. Thank you Mary for your labor of love. May the Lord continue to bless you. Michelle in St. Louis, MO USA
