    Korean Cucumber Salad is a refreshing and delicious side dish to serve alongside barbecued meat and white rice. It only takes a few minutes to prepare, and you can also just eat it as a snack!
    Sometimes people like to salt the cucumbers first to release and discard the excess liquid, but I find that it’s not necessary if you plan on eating them right away! And I feel like this Korean cucumber salad recipe is best eaten right after it’s prepared.
    Feel free to play around with the ratio of ingredients. Some people prefer it tangier or spicier. I like to be able to taste the toasted sesame oil, so I prefer to make that the main ingredient.
    TYPE OF CUCUMBER: Persian cucumbers are my favorite to use for this because they have thin skin, no seeds, and they’re nice and crunchy! They also don’t release as much liquid as other kinds. If you can’t find Persian cucumbers, you can use English cucumbers and core out the seeds.
    Important note about salt: The dish will get saltier the longer the cumbers sit, so if you plan on letting them sit overnight, reduce the amount of soy sauce/salt. I like to eat them immediately after making them.

      yes I've loveddd cucumbers and so many people seem to hate it. some say that it even tastes like electricity 🥲 but it definitely is my favourite vegetable to eat after lunch it's so light and hydrating.

    I like to add fish sauce too, and go easy on real sesame oil (the good stuff is strong). Also, allowing this to sit in the fridge for a day, really allows the flavors to meld and you won't have harsh tones of one dominating the other.

      I replace sesame oil with olive oil cause sesame oil is very expensive in my country and olive oil is more accessible.

      @@MissOrchid12 Tajín is a chili powder that isn’t that spicy, it has a combination of salt and chili flavor, it’s perfect for sweet fruits (like oranges or watermelon) and as explained by people above that it is also great on cucumbers with lemon! :) I’ve tried it when I was younger and it’s really delicious when you have the right combo

    We Chinese people make it similarly! Except without the gochugaru.
    We use the salt, vinegar, sometimes sriracha sauce or chili oil, and a tiny bit of sugar to balance the taste then mix.
    I’m glad Asian cultures are alike in some sort of way.

    It’s similar to what I eat in the summer I’m Mexican so in the summer my mom cuts cucumbers and adds Chamoy and Tahin and it’s so good😊😊😊

    6 Persian cucumbers, 1/2″ slices (sub 1-2 English cucumbers, seeds removed)
    2 tablespoon toasted sesame oil
    1 teaspoon soy sauce
    1 teaspoon sea salt (start with 1/2 tsp and adjust from there)
    1 teaspoon gochugaru Korean red pepper flakes (sub 1/4 teaspoon crushed red pepper flakes)
    1 1/2 teaspoon rice vinegar
    1/2 teaspoon white sugar
    3 cloves garlic, minced
    Toasted sesame seeds
    Instructions
    Combine all the ingredients for the sauce and then add cucumbers. Give it a good mix and serve immediately

      Yes!!! I don't know if you're American, but us Americans have *really* lost touch with healthy foods. I moved to South India(husband is Tamil) & I've learned so much about food!! I bet you could find some good, quick recipes on tiktok. But be warned, "simple" dishes have like 20 ingredients 😆 but it's like this dish here, the bulk of ingredients are like spices or grains. So you can make simple things like cucumber taste SO good!
      Long story short, Indian cuisine makes healthy taste GOOD! I never thought I could be vegetarian without sacrificing good foods, but the majority of Indian meals are veg & they make it taste so frickin good 🤤 Highly recommend finding some quick Indian recipes!! ❤ They really know how to do it lol!

    Made these tonight, finally, after holding on to the recipe for far too long. Thanks! It is really delicious and goes with almost any main dish nicely. I was afraid it would be too much sesame oil or gochugaru but it’s not too spicy or oily.

    I’m Chinese and we have a very similar dish to this! The Chinese version is also spicy, but instead of gochugaru we use chilli oil. And we also use a lot less sugar. The rest is pretty much the same, but some people may also add coriander for some extra flavour. Most importantly, instead of cutting the cucumber into cubes, we usually “smack” it apart. This helps the cucumber to absorb the flavour more. That’s why we call this dish “手拍青瓜 (Smacked Cucumber)”.

      no it doesnt, she said that the second one gets more seasoning bc the cuts in the first one dont open up to take in the seasoning, so it ends up having a smaller surface area to volume ratio than the second way its cut, so the 2nd cutting method gets more seasoning.

    In Chinese, it’s called 蓑衣黄瓜🥒
    Obviously the Chinese version doesn’t typically have gochugaru. That’s more of a Korean thing as Koreans like to blend spicy 🌶️ and sweet together.

      @@Imokayluv You must be Korean, let me tell you something, food is not something that can be claimed. Food and food culture is inspired, it is reinvented and it is passed on, the origins of almost everything in Asia is China, you know why that is?
      Because the Chinese created a writing system waaaay before everyone else in Asia, this makes them the nation with oldest documents in Asia, and therefore everything seems to have origins in China, BUT, just because the Chinese wrote it down first, does most definitely not mean that they were the ones to invent it. Many smaller tribute nation like the three kingdoms of Korea, Mongolia, Tibet, Japan, Nepal, India and so on. Regions of China with smaller communities and ethnic difference to Chinese has inspired Chinese cuisine throughout their history. Bread came to China through Egypt and Sumeria , today China claims to be the origins of Bao, Steamed pork buns, but how would China make these without bread? This is how history works my Korean friend, and instead of fighting it, its must easier to accept that food is ever changing and so is culture, let share it and be proud of who we are, not what we eat.

    I started making this dish last year and I am obsessed with it. My mom gets cukes every time she goes to the store now hoping I will make it.
    I always do the chopstick cutting trick and use Persian cucumbers (but English will work because the skin is thin). I add rice vinegar, use more soy sauce, and substitute homemade chili oil for gochu garu. Marinate an hour and perfection

    My grandmother made this as a refreshing side during summer bbqs, she passed away 2 years ago and it’s been hard on my family, but I find her influence most closely when I make the foods she shared with me as a child. She always told me how much better the cabbage was overseas in south korea, she would home make kimchi and would always lament about the cabbage in the us not being as good

    Cucumbers
    Vidalia onion
    Cherry (or any small variety) tomatoes
    Mix Italian dressing in & refrigerate until ready to eat.
    It's amazing!! But will definitely have to try this too!!💜💜

      Since gochugaru is “Korean chili flakes” in English, you can use just regular chili flakes ^^

      you can just leave them out it just adds a nice flavor but it is not necessary!! i have made this multiple times and when i ran out of sesame seeds it tasted just fine aswell

    My parents lived in Korea for 15 years and they make Korean food every now and then and one of my favorite things is cucumber kimchi, so now if we have cucumbers at the house that we won't need I'll make me some cucumber kimchi to eat, so yummy

    This is a traditional Chinese dish, only the Chinese pepper is replaced by Korean pepper in this video.

      @@fionahu660 what do you mean.. koreans never make cucumber cuts like that... what they do is Cut it half and do cross cut and put stuffs in the middle.

    We also make it in India but with our own special spices with some lemon squeeze it's just fabulous n delicious. Now I'm craving it . Mummyyyyyyyyyyyyyyy🏃🏻🏃🏻

    Why you called it Korean Cucumber Salad .This is Chinese Cucumber Salad. You just adjust one ingredient Gochugaru and you called it Korean Cucumber Salad , That's Korean always do .Smh

    i just know how mouth watering this is 😂 im indian and not a lot of us do this but i eat cucumbers with Chaat Masala,salt, and lemon which makes it spicy and sour

    Same recipe once and absolutely loved it. Thought cabbage would probably be a nice addition as i had some extra cabbage to use up... finely shredded and I was pleasantly surprised!!! The sauce really brings out the yummy in all the veg! Might try a shredded carrot next time!❤

    That sesame oil makes it hit different.

    I've seen this recipe before, except the recipe i have has you doing the salting after cutting and let them sit for 10-15 mins to dehydrate/wilting them a bit before missing in the seasoning, but I really like how you cut the cucumbers- will definitely have to try them that way 🤩
