Great to see you on UA-cam! We already have this on our special occasion rotation since January. Tasty enough for weekly, but quite a lot of chopping. And we hardly ever have leftovers ;) I now completely leave out the balsamic glaze (incredibly delicious without) and made it a few times with the flax seed and I can attest - there is absolutely no difference if you use eggs or the flax egg. I make it in my silicone loaf pan and it is always easy to remove.

@@HeartfulTable Thanks for the suggestion. I tried it last week and it does make it quicker. It still takes too long (oven time alone) for us to make it during the week, unless I'm working from home, which currently happens often enough :) Also this way it seemed a bit more moist (not necessarily a bad thing) and I just LOVE the texture of 'properly' cut carrots. So I'll make is as pandemic-home-office-special in the quick version during the week and in the future we'll stick with leftovers from the weekend.

This looks really good. And firm! For a household of one or two, how long would I bake this if using either half the recipe in a half-size loaf pan (or free form on baking sheet), or in muffin cups (regular, not mini)?

It would taste disgusting. Eggs do not match the mixture, the mixture is already full of protein. The binder is not for flavour it is only to bind. Even apple sauce with out sugar or with can be used to bind with.

How many days flax meal is good in fridge?
Ideally should be used within a few days, but honestly, I never do. If I’m eating it raw then I try and use fresh.
How much mushrooms did you use in this recipe?
