Recipe -
300g plain flour
1 tsp baking powder
3/4 tsp bicarbonate of soda
1/2 tsp salt
100g caster sugar
100g light brown sugar
120 ml vegetable oil
75ml water
1 tsp vanilla extract
100g chocolate chips of your choice!

This recipe is the best! I made them gluten free with 200g of oat flour and 100g of almond flour and it was so good!
Hey ! I just made them both freezing it and just refrigerating the cookie balls ten minutes before baking and both turned out AMAZING. They are crunchy on the outside and super soft inside, not too crumbly and I love them!

Loved the cookie, I added some variations and it came out perfectly.
I knew I messed up (batter wasn't wet enough) but still baked them, and although they didn't spread everyone loved them!!! I'm making another batch right now. Finally a vegan cookie recipe that is actually good. Thank you thank you thank you!!!!
Thanks Jemma for sharing this recipe! I baked it for a gathering and everyone loves it!!! I substituted caster sugar with light brown sugar, resulting in a chewy cookie which spreads less, nevertheless the taste is still awesome! I also used chocolate chips which works just as fine! Gonna bake another batch which follows the exact recipe! Yum!!!

I never make cookies because when I used to make them they would always turn into hockey pucks. This recipe really turned out for me! I added 60 grams more brown sugar, used half salted vegan margarine and half coconut oil so I only added 1/4 tsp of salt. Sprinkled some coconut on a few of them too. Thanks!

I'm a vegan from the Philippines, today I made these and I'm pretty glad I tested baking one first before everything because they were thick af! Didn't spread as much, though it did rise a little so I ended up flattening the cookies to the size and thickness I want before baking so they come out a little flat and crisp while keeping the middle soft!
I love love love them, btw! When I was nonvegan, I used to make tons of cookies from your nonvegan cookie recipe and I'm just so glad you put out a vegan recipe.

Ohhhhh. I made vegan cookies for my sister for Christmas (she's vegan, I'm not at all lol) and I couldn't for the life of me figure out how to get the chocolate chips to stick to the cookie dough. This was a helpful video and I'm for sure going to use this technique in the future. Thanks Jemma 😊

Done this 7 hours ago and just pulled the dough out of the fridge but it's way too sticky to handle.. Will put back in and leave over night to see if that makes a difference..

Thank you so much for this recipe! The cookies came out so well! My cookie dough didn't stick very well to the chocolate chips so I just mixed them in and it was no problem. I also rolled the cookies in cinnamon-cardamom sugar for some spice. Everyone really liked them, definitely going to keep this recipe for the future!
Did they spread naturally on there own without you patting them down
@@witchiegemini6518 I did pat them down a bit, they spread a little but I refridgerated them overnight so that may be why!
Can you use coconut oil instead of vegetable oil?

I do however do not like to put mounts of sugar in my recipes, which I am assuming is the issue?
However I can not see the sense of putting 2:3 ratio of sugar to flour, seems too much

I mean, it depends on your oven anyways (12-15') so just set a timer for 12' and keep checking. 😊

Is there a specific reason you don't add the chocolate chips straight into the cookie dough itself or is it just for the looks? :)
I personally find it hard to mix in chocolate chips straight into the cookie mix because when it is time to form them into balls the mixture just never forms into a good shape in my hand, even worse if they are chocolate chunks ! They end up falling apart eventually. I find that if I am in a hurry and want to mix in the chocolate chips I gotta use an ice cream scoop instead of forming rounds using my hands. I hope this answered your question :)
It's a very soft dough and looks play a big part in that choice too I guess
I tried making these over the weekend. The dough is quite greasy from the oil and I found the chocolate chips just didn’t stick into the mixture hth 😊
The chocolate would most likely ruin the texture of the actual cookie itself. If you put a quarter of the chocolate in just as they come out of the oven, you end up with chocolate bits that are half melted, and are SOO good
