I love, love LOVE that you don't use gelatin. Gelatin is the main reason why I never made a no-bake fruit pie. And that pie crust is to die for. When I can find nice strawberries (they're usually half green), I'm definitely gonna make this pie...and maybe other fruits now that I know how. Thank you so much.

I made this tonight for Saturday. You know what is good.. 1/2 tablespoon of lemon zest mixed with the strawberry concoction. Sooo good! I kind of goofed and didn't keep the pan for the final step. So, I used fresh strawberry jam with lemon zest. Thank you for the recipe!

Another absolutely perfect pie for me to try. I use the iSi cream whipper canister system to always have whipped cream on hand all the time (until the expiry date shown on the carton anyway). I bought a large supply of charger cartridges, so always have supplies on hand. I love that you use butter and prime ingredients that make each dish heavenly. People used to 'butter shame' me when most of the world switched to that awful margarine (even dieticians and doctors tried to get me to use marg.). Now they have been updated and butter is fine. Yippee.
This recipe delivers! I was super short on time so I used a Marie Calendars deep dish pie crust and a can of Reddi Whip- Beyond delicious. Gonna do it again when I have the time to do the crust and whipped cream!

The recipe I have made for many, many years is very much like yours. However, before I put the strawberries in the pie shell I spread a thin layer of cream cheese (4oz). It also provides a barrier between the berries and the pie shell. This is my favorite pie!

I always do my shipped cream by hand because I make it in small batches. other wise it's all my daughter would eat. I may do this with an Orange zest and juice instead because that is what I have on hand today. I love getting strawberries from the pick your own farms near by. We get California strawberries in the stores but they have to be picked so young that they are scarcely flavoured. I'm sure in California where they can ripen in the fields until they hit peek flavor they are better but I love Strawberries grown in Texas sunshine. They have a slightly sour pucker to them, the same with Blueberries. I highly recommend where ever you are going fruit picking in season and tasting the difference between the fruit that is shipped and the fruit that is left to ripen in the soil and sunshine where you live. the difference is amazing!! makes for richer brighter deeper flavors in your baking.

Thanks john! This turned out really well :) All those tricks for the blind bake ended up giving me a perfect shell. I actually used loose change as pie weights, which was okay because the foil gave protection from any unwanted contamination... Not by choice, I just didnt have any rice or beans!

I think it’s perfect. You must try it, your Dad will love it. But if you think it’s lil bit to big, you also can slice it into 4 pieces.

7:40 Yes, I often whip cream by hand. I freeze the bowl and balloon whisk and it doesn't take much longer than if I had used my KA mixer.
