    Ingredients:
    Ripe tomatoes 4-5
    Onions 2
    Olive oil 3-4 tbs
    Salt 1 tsp or to taste
    Garlic powder 1tsp
    Red chilli powder 1/2 tsp
    Chilli flakes 1/2 tsp
    Cumin powder 1/4 tsp
    Coriander powder 1/2 tsp
    Green chilli 1-2
    Green coriander 2 tbs
    Eggs 5
    Process:
    -In a fry pan, add oil and chopped onions.
    -Fry the onions until light brown.
    -Add tomatoes & all spices. Mix well.
    -Cover & cook for 10-12 minutes on medium flame.
    -Add green chilli & green coriander. Give it a mix.
    -Flatten the sauce in the pan, create wells (spaces) for each egg. Carefully crack the eggs into these wells and allow them to poach in the sauce.
    -Add some green coriander & chilli flakes for garnishing.
    -Cover the pan and cook until the eggs are cooked to your desired doneness (low flame).
    *You can blend the onions and tomatoes instead of chopping them to get a smoother sauce consistency.
