There are many subgenres and game formulas inside those genres. I would categorize games in this way:
ACTION: FPS (arena shooter / twitch shooter / boomer shooter / looter shooter / hero shooter / battle royale/ "realistic" shooter / immersive shooters), third-person shooters
ARCADE: shoot-em-up (shmup), platformer, metroidvania, top-down games
ADVENTURE: point-and-click quest, walking simulator, visual novel.
FIGHTING: 2D and 3D fighting games, beat-em-up, hack&slash
RPG: cRPG, jRPG, arcade RPG (Diablo clones, Roguelikes), action RPG (Witcher, Elder Scrolls games, Souls-likes, etc), MMORPG
STRATEGY: turnbased or realtime (RTS, 4x Strategy, Tactical strategy, Management/Tycoon strategy), Tower Defence. There also a Action/FPS strategies (Battlezone, Hostile Waters, etc) and RPG/RTS (Spellforce)
SPORTS: racing games (arcade or realistic) and all kinds of sports
SIMULATORS: Vehicle Simulators (airplanes, spaceship, ground vehicle), Profession Simulator, Life Simulator
PUZZLE: usually logic games
RANDOM-BASED: casino games, tabletop, card games
MOBA - mix betweeen strategy, RPG, and action
Survival - basically action games with progression, crafting and maybe some RPG elements
Horror - I would say horror is an element of the setting and story, not genre defining factor.
Some first-person shooters don't let you swap the weapon your holding, but rather swap your the character how you are playing. These are the hero shooters, which allows you to play as different characters, each welding different weapons and having different abilities. Hero shooters are generally not as violent than other shooters, with them having little blood and no swearing.
I think it should be a sub-genre along with Tactical Shooter, Third Person Shooter, Arcade Shooter, etc

Some additional details:
1: Sometimes, you will hear action games in the context of DMC\Platinum style games, which follows a beat-em-up style of gameplay that prioritizes stylish play. Most commoners call these "Character action games", but you'll still hear people just refer to them like normal.
2: Adventure games are typically referred to as "action-adventure" because they'll feature elements of "regular" action games, because if they didn't have them, it would be too boring.
3: There are two types of horror: Survival and regular. Regular horror is mostly just for scaring people, but survival horror is more akin to Resident Evil, where the core of the experience is figuring out how to make your character survive using very limited tools.
4: The Legend of Zelda (Shown frequently in this section) is not a typical RPG. It's more akin to a regular adventure game.
Most people will refer to RPGs as the ones where you're given tons of stats to level up, and ones with an abundance of side-content.
While Zelda TECHNICALLY fits within these guidelines, it's very different to what most RPG players will expect.
5: Of course, there's two different types of strategy.
One is real-time, and the other is turn-based. I think you can probably guess the difference.
6: When you see someone say "fighting game" they're usually referring to the ones where you directly face-off a real person playing the game, and your goal is to drain their health bar to zero. (AKA Street Fighter and Mortal Kombat)
Since Smash Bros. is so unique in this regard, they just call games like that "Platform fighters".
If your game involves fighting multiple different AI characters, we call them beat-em-ups. (To prevent things like Sifu appearing on "best fighting games" in Game Awards 2022)
Also, fighting games are cool.
7: Tetris here is what's known as a "block puzzle game", because the puzzles here are not pre-created, (Like in Portal) but you do plenty of puzzling there.
8: Racing games come in two forms. Arcade and simulation. With arcade mostly focusing on "less realistic" and simulation focusing on "more realistic"
However, as you can imagine, many, many racing games love to blur the line between these.
So it's more of a spectrum rather than a genre.
9: Just plain sports games are way too boring.
Because of this, cool developers created games that involve the use of sports (Eg. Soccer) and actually make it play like a proper video game.
By far the most famous example of these are Wii Sports, NFL Blitz, and the publishing label EA Sports BIG. (Made SSX and NBA Street)
So not all sports games are actually like Madden, in the sense of literally just trying to be a direct copy of real sports.
10: Most shooters are referred to as "FPS" games, (First Person Shooter) and even those have their own separate genres.
You'll hear some categorized as "movement shooters" because they'll focus on smooth movement through stages, while shooting enemies. (Obviously great example of this is ULTRAKILL)
And part of the reason why it's called FPS is because Fortnite is not first person.
11: There's also what people will call collectathons. And the concept for these is basically just "like Mario 64", where you explore open-ended environments to collect all of the collectible items. They're usually 3D games. But then there's FEZ, (Seen at 2:39) which is kind of a collectathon, and it's TECHNICALLY 3D, but trying to think any further will make your brain hurt.
12: Of course, The Sims is very different to Farming Simulator. As a result, you'll sometimes hear these referred to as "city-builders" or just straight-up strategy games.
13: You can find many different examples of games which involve survival, but don't really get considered as survival games.
Generally, survival games will revolve around you spawning in a randomly generated environment, and your first goal will usually be to build shelter to survive.

14: Sandbox games will usually be moreso a subgenre rather than a genre. And the reason why is because of games like Teardown. It's a heist game, but the amount of freedom you get in it allows you to express yourself in more ways than something like Payday.
Minecraft and Terraria then, are sandbox survival games.
15: A lot of educational games will be referred to as "Edutainment games", which peaked around the 90s, and they were sold as actual video games in actual stores.
So Kahoot is not edutainment, because it's a free browser game that's mostly played in schools.

Metroidvania is a platformer subgenre. Roguelike is more of a progression type because it can be implemented in almost every genre

If I had to do a top 3 list, I would say 1. Survival, 2. Simulation 3. Horror
Adventure games focus on storytelling, puzzles, and exploration in large virtual worlds. Horror games aim to invoke fear through atmospheric storytelling and frightening imagery. RPGs allow players to take on roles, embark on quests, and shape narratives. Strategy games require tactical thinking and resource management.

It's hard to be comprehensive with genres since they scale down to the smallest little details. If you're looking to make a part 2 I'd recommend checking games databases to see what kinda genres you can find. Places like mobygames, or maybe even flashpoint are good starting points
