I love these videos so much. Eating vegetable soup is very important throughout the year. I’d like to offer a small suggestion. I learned awhile back that when cooking soup with vegetables, sometimes it’s good to sauté the carrots and onion to soften a bit. Heat up or bring to a boil the chicken stock separately. Add the vegetables, mushrooms, etc. Bring to a simmer but importantly keep the lid on. Vitamins can evaporate with the steam. Cook briefly for about 20 minutes. You’re right to add bok Choy at the end. Cut off the heat. Don’t lift the lid. Let the soup stop simmering. Lift the lid, stir, and close the lid. The vitamins will stay in the pot. It’s fine to serve now,😊

Hi Christy, It’s funny you say this. We just finished filming and I did the whole thing with my hair down because Tommy said I needed to “change things up” ha!! However, it was just the two of us and my daughter (the camera-woman) having lunch , so I think we were good 👍🏼 . When I’m not on camera, my hair is always up while cooking 🧑🍳 for the reasons of which you speak. 🩷

Hi Janie, yes, I try to. It’s now mandatory in California to put our veggie scraps into the green bins (along with the yard waste), so once I figured out how to do it efficiently I didn’t want to throw them away, knowing they makes he best amendment. Full disclosure, I linked “compostable” bags on my carrot ginger soup video, and I’ve learned they don’t degrade very well. Better to just to throw the scraps in a hole and cover them for a month and be amazed at how they melt into the earth! 💗
LIke you, I am inspired by a visual picture of a dish or meal. The written recipe alone does not inspire me. This soup looks delicious, and you make prep almost feel like zen therapy. Living alone... I love making soup and freezing individual portions for myself. Adding pasta or wontons later is perfect.
Yes! After my daughters left for college I went from cooking for a family to routinely cooking for myself for several years. Big adjustment! The freezer is the only way I found to cook large meals and portion out for later. It’s like having little restaurant in your own home where you can control the ingredients! At any time I’d have 3 soups and a lasagna to choose from. (Btw, I learned how to freeze in glass without cracking it! I’ll add that to a video soon!) Have an awesome day! :)
