I think this is the worst thing about this show. They calculate the cost of the dish by adding all of ingredients price which sometimes use just 1/10 or even less. If it’s portion price it’d be better imo

After watching this a second time, I realize that Alan cut the jalapeño and deveined it without gloves. My hands got flashbacks. Last time I didn’t use gloves, and soaked it in olive oil, I went through near half of a gallon of milk trying to get the pain to stop. Still a fantastic episode.

Deep frying fries is genuinly the easiest thing you can do and never ceased to amaze me how every cooking show tries to complicate it. "oh you need to fry them twice" "the temperature needs to be this exact thing" etc. Just get the oil hot, add the fries and wait for them to cook.
it was these videos that made me want to become a food scientist when I was back in high school. Now I'm a third year university student studying food Science. I've stuck with it ever since. Thank you!

Amazing Emily made fries without ketchup! Chef Alan was great, so much going on but still chill. Both these recipes would make better nachos though. I love Mexican food so I hope to see more of Alan.
If you're ever par-boiling or doing something similar with potatoes, I neat trick I learned is that adding acid like vinegar to the potato helps them keep a more defined shape and making the environment more basic, say by adding bi-carb soda, makes them more prone to breaking and fluffing up.
I've been loving the "swap ingredients" videos a lot! I have to say though as a Belgian i'm a bit disappointed they didnt go with something authentic to the fries... The fries themselves weren't the prize of these dishes, rather they got a few minutes and a half explanation on how to fry fries :/
As a Brazilian, beans would be one of the last things I'd put on fries, let alone avocados. Having avocados as something on the savory side is not usual but ok-ish. But man, beans is one of the most radically different preparations I notice between Brazilians and other countries, specially Americans, British and Mexican
