I've done that too when I was learning; that's what the seam ripper is for!

This fabric stretches so it wouldn't be my first choice for a bag.

There's a playback speed option in your UA-cam settings - feel free to slow the video down to your liking.
Try pausing the video. That's what I do, and also like she said, there's a setting to play the video slower.
