DUCK has a dense flesh unlike chicken, it’s more like steak, so salmonella and E Coli don’t go deep into the flesh like it does with chicken, which is the reason why you can cook it to a rare- well done temps. Anything that may harm you is on the surface of the Duck. Duck truly is “THE STEAK OF THE SKY”. I wanted to clarify these things before they are brought up. Thanks for the support and watching y’all.

My wife didn't want to try duck at first, but now she sees it as one of her favorite meats. I've never cooked one outside. I bet they would be great on the rotisserie with just a little hickory (or fruit wood of almost any variety) for smoke. Have a great week and stay well, Chris.

Nice. I’ve been wanting to try duck but hard to find around here. I don’t have a big easy, but do have a rotisserie for my kettle. Might try that when I can find a duck for a good price.
They have them generally in the Frozen section at the Grocery store, or you can go to an Indian or Caribbean store and the will have them. Check some of the farms in your area. Thanks for the support and watching

I have a Big Easy also but haven't shown it much love. I watched another guys channel (Rosel Simpson) who really does a lot with his big easy and he inspired me to get more accessories for it. Interesting recipe, TFS!
