Coca Cola Glazed Ham Cooked in the Big Easy Oil Less Fryer | Injected & Glazed Ham

  • In today’s recipe we’re making a Ham in the Big Easy Oil-Less Fryer. We will start by injecting the ham with brown sugar, rum and butter then we will glaze the ham with Coca-Cola and brown sugar.
    Injection Ingredients
    • 1/2 cup of rum
    • 1/2 cup of brown sugar (dark or light)
    • 1.5 lb sticks butter
    Injection recipe adapted from www.smoking-meat.com/november-.... This link also includes a recipe for a maple syrup injection.
    Glaze Ingredients
    • 1/3 cup brown mustard
    • 22 oz Coca-Cola
    • 1/2 cup orange juice
    • ½ cup brown sugar
    Protein Ingredients
    • 8 lb Kentucky Legend Hickory Smoked Ham
    • Pork Candy Sweet Hickory Rub (or your favorite ham seasoning); more info here www.armadillopepper.com/produ...
    Recipe Instructions
    1. Pour the rum in a sauce pan, then turn the heat on low. Use CAUTION as rum is flammable.
    2. Add the brown sugar and heat until the sugar is fully dissolved and butter is melted. Do not bring to a boil or simmer.
    3. Remove from the heat and let cool until safe to handle.
    4. Inject the ham at 1 to 2” intervals. When you inject the rum/butter/sugar and it starts coming out other places in the ham then you are done.
    5. Rub the remaining injection on the outside of the ham to use as a binder for the seasoning.
    6. Season the ham with your favorite rub. You may want to use a low sugar rub or the ham will darken in the Big Easy Oil-Less Fryer. I used Pork Candy Sweet Hickory which does have brown sugar and cane juice, but I applied a very light layer.
    7. Preheat the Big Easy Oil-Less Fryer for 15 minutes on high heat.
    8. Place the ham in the Big Easy Oil-Less Fryer.
    9. When the ham reaches 125 degrees F, start the glaze by putting all the glaze ingredients in a medium sauce pan over medium heat.
    10. Bring the glaze to a boil, then simmer until reduced by about one half (20 - 30 minutes).
    11. When the ham reaches 135 degrees, remove the basket and apply the glaze. Use CAUTION as the basket is hot. Glaze the ham while it is in the basket (no need to remove).
    12. Glaze again in 15 to 20 minutes and continue cooking until the ham reaches an internal temperature of 140 degrees F.
    13. Remove the basket from the Big Easy Oil-Less Fryer and let cool until safe to handle (10 - 20 minutes).
    14. Remove the ham from the basket and serve!

    Ham is one my favorite things to carve because it's usually been a while since we've had it, and the one who carves gets to sample (a lot). You ham looked very good and tasty. Like the glaze. I saw where that basket didn't want to go in. You can't be gettin mad and throwin stuff around. lol Thought it may be the temperature change, but materials usually contract in cold temps and expand in warmer temps. I'll have to refer back to the other reason. Ham sammys all weekend. (The one at midnight is the best) Great job Jeff

    I normally make one of those spiral sliced hams that include their own glaze. Amateur stuff. My girlfriend and I are baking our first Kentucky Legend Ham today so I needed some ideas and I stumbled upon your video. It made my mouth water. 😅

    Wow, look at the bark on that ham! I think you need to bend the legs in a little bit so it fits down in there easier! Nice injection and sauce ingredients. I am sure it was awesome!

    I made this today in my Big Easy. I did some things different. Due to the pandemic I could only get a butt portion ham. I sat it in a pan and left it in the plastic and injected it through the plastic until it was fully saturated. Left it to marinate overnight in the fridge that way.
    Pulled it out. I had reserved some of the marinade from the night before in a container in the fridge. I warmed it up, unwrapped the ham and slathered it with it. I then used a store bought rub I found which was a sweet & smoky Kansas City type rub.
    I managed to just squeeze the ham into the Big Easy. A butt portion ham is a bit awkward to get to lay cut side down in there. Set it and let it go until it hit about 120 degrees internally. I then hit it with the glaze twice as recommended and finished it off at about 140ish.
    The glaze I used was a bit different. I was desperate. My kids had drank all of our regular coke and I didn't have any brown mustard. So I used a Coke Zero Orange and I had a bottle of Woeber's Brand jalapeno mustard.
    This turned out AMAZING! Best ham I have ever eaten and I am not exaggerating. The rub I used plus the jalapeno mustard just set things off, added some spicy to the sweetness and it was perfect. Many thanks for posting this recipe, it gave me a good launching point to wing it with what I had on hand. With us being quarantined right now it was a nice little Easter dinner for the family. Everyone loved it and I am writing down exactly what I did so I can remember it.

    I've tried injecting a ham and had a dickens of a time since the meat was dense. You make it look much easier. Maybe cause the inject was still warm-ish? Ham looked great Jeff, but my Mom requested beef roast for Christmas since we had ham and turkey for Thanks giving. Working on a long sous vide roast right now. Video in a couple days.

      I don't know if it was because it was still warm or if it was due to the specific ham. This was the most tender ham that I've ever had. Beef sounds good for Christmas.....I've made ham 2 weeks in a row 😄

    We usually get a spiral cut ham, so I don't think injection would work. But I sure want to try the coca cola glaze.

      Haven't tried this injection yet but I've injected alot of spiral hams before smoking. It definitely takes on the flavor of injection. Would definitely recommend giving it a try.

      I've never had one get to 150 in an hour. That is super fast. How big? What cook temp? Did you check with an accurate instant read digital thermometer?
