Butter Cake | How to Make a Perfect Butter Cake

- This shortened cake is very soft and delicious
This is a very easy butter cake (yellow cake) recipe and it is very straightforward.
This is much similar to pound cake.
My videos show how to make the butter cake with a step by step method.
Please watch the video till the end so you will not miss the important steps.
250g All purpose flour (1½ cups + 1 tbsp)
200g caster sugar (1 1/4 cups)
200g unsalted butter (1 cup - remove 1 tabs)
3 x 80g eggs
1.5 tsp vanilla essence
1 1/4 tsp baking powder (7g)
1/2 cup lite milk (100g )
Important tips
When you melt butter, use a hot water bowl to melt the butter, Keep the container with butter in the hot water melt them slowly. Do not completely melt it and butter should not be hot when add in the batter
Preheat the oven to 100 C for 10 minutes
Bake the cake at 150 C for 50 minutes, Here we use the baking tin with a depth so it takes time to bake the inside of the cake
Do not over beat your batter, Make sure the batter has a volume.
Make sure sugar is completely dissolved

Just made it today and the cake turned out beautifully. Gently melting the butter and cooling it down before adding to the eggs is such a game changer, it’s unlike the usual creaming method but works so much better. I will alter the ingredients in the future to add a little lemon juice for extra flavour, but for a soft and fluffy vanilla cake this recipe is the best I’ve come across so far :)

Made this today! Didn’t have a mixer so whisked by hand. Also used normal sugar as I didn’t have caster sugar. Turned out wonderful, I did have to bake it longer though. At 50 mins 150C it was raw in the middle, so I let it continue baking for another 10-15 mins on 155-160C and it turned out great! Thank you for yummy cake.
Where is your butter?
Well i made one it came out perfect and tasty as it should be. Was my second try and my parents liked it too. Inside was good baked. I have tried recipies where the batter inside is still not baked. A tip use the butter melted and in room temp.

The cake turned out beautifully, the bottom part of my cake looks like it’s not really done, I don’t if it’s because I didn’t leave it long enough. Or what could be the reason for this
thanks for the video. Using a machine for the flour addition makes a tough cake. Flour should be folded with a spoon or spatula, and no mixer should be used once the flour has been added.
Thank you, appreciate your thought, you can use a spatula to mix the flour as well. But even with spatula if you over mix, then the cake become dense.
Basically with this recipe the mixer at lowest speed takes less than 30 seconds to mix in flour evenly in the batter without loosing the trapped air (keeping the volume) that helps to make the cake fluffy and soft. This also helps the cake to rise evenly while baking 🙏☺️

You can, also you can heat the milk to 70C then cool down to room temperature helps to increase the self life.

Hi nice recipe will try this tomorrow… but I have a little problem with my mini oven..if I don’t increase it to 230 which is the highest temperature it won’t get hot or bake my dough(s) Any help on this? Mostly cakes are meant to be baked at 150c for 50minutes
Hi, if you could get a oven thermometer to place in your oven you can see the actual temperature inside of your oven ( probably your oven may not be heating up to 230 even it says 230) . So you can adjust temperature as required. Hope this helps and happy baking 🙂

Hi im just thinking do I need to use this creaming method ( egg with sugar) , i do have a vinalla cake same like this but it don't use creaming, it use the all in one method ( mix everything altogether)
Yes actually, whipping egg white helps for cake to rise. Here we use deep tray and whipping egg white helps to make cake softer as well.

Hi yes you can, I recommend to grease it slightly before adding the batter, I experienced otherwise , sometimes it was bit difficult to remove after baking
Also watch out for oven temperature, or place the cake tray in a water tray to prevent cake burn in the bottom with aluminium heat up quickly.

Hi, If you think your oven does not circulate the heat properly, it would be helpful to keep the both rods on to monitor, Yes you can use a conventional oven, but when you use the conventional oven, set the temperature to 10 degrees higher. Hope this helped, Happy Baking 😊
