  • Full recipe for Jaggery Rice aka Gur ke Chawal.
    Ingredients:
    Rice - 3 cups/750g
    Jaggery - 380g
    Water - 6 cups/1680ml-1.68 litres
    Cardamoms - 10
    Salt - 1 tsp
    Olive oil - 70ml
    Peel of one orange
    Process:
    Put the rice into a bowl and wash and rinse a few times until the water is clear.
    Then fill bowl with water and leave rice to soak for 30 minutes.
    In a pan, put in the jaggery.
    Pour in the 6 cups of water.
    Throw in the cardamoms.
    Cover pan with lid and turn on the heat. Leave it until the jaggery melts.
    In the meantime, remove the peel from one orange. We only need the peel. Cut the peel into smaller pieces.
    Back to the pan. When the jaggery has melted, add in 1 tsp of salt and the olive oil.
    Strain the rice and add into the pan.
    Then add in the cut orange peel and stir.
    Cover pan with lid.
    When it starts boiling, stir. Then put lid back on.
    When there is little water left, remove the lid and stir.
    When the water has evaporated, put some foil over the pan and close tight with lid.
    Let cook for 15 minutes on low heat.
    Then turn off the heat.
    Remove lid and stir.
    Then dish out.
    Enjoy.
