    Ingredients:
    Carrots - 2kg
    Olive oil - 2 tbsp
    Green cardamoms - 8
    Water - 50ml
    Milk - 3 litres
    Saffron - a few threads
    Butter - 150g
    Coconut sugar - 80g
    Process:
    Cut off the ends of the carrots and peel.
    Then cut into pieces.
    Add 2 tbsp olive oil to pan.
    Transfer the carrots to a pan and add the cardamoms. Stir fry for 5 minutes.
    Then transfer carrots to a pressure cooker and add 50ml water and pressure cook for 30 minutes.
    Then transfer to a pan on heat and mash the carrots.
    Cook until the water evaporates.
    Then add 1.5 litres of milk.
    Cook and stir until the milk is reduced to about half.
    Then add another 1.5 litres of milk and cook and stir until milk has reduced to about half.
    Then add the saffron, butter and coconut sugar and stir.
    Continue to cook and stir until the milk has evaporated.
    Then it is ready. Dish out.
    You can sprinkle on some sliced/grated almonds.
