Chicken legs with skin contain 9979mg of glutamine which helps heal leaky gut, an underlying cause of inflammation.
Ingredients:
Chicken legs with skin - 6
Making the brine to soak legs in:
Water - 1 ½ liters
Salt - 4 tbps
White vinegar - ¼ cup
Crushed garlic - 1 tbs
Lemon juice - 2 tbsp
Making the spice powder mix:
Garlic powder - ½ tbsp
Red chili flakes - 1 tbsp
Coriander seeds - 1 ½ tbsp
Cumin seeds - 2 tbsp
Black peppercorns - ½ tbsp
Salt - 1 tbsp
Turmeric powder - ½ tbsp
Cardamoms - 2
Red food color - ¼ tsp
Process:
Wash the chicken legs.
Make 4 deep cuts on each side of the leg.
Pour water into a bowl and add the salt, vinegar, crushed garlic, lemon juice and stir.
Put the chicken legs in and soak for 4 hours.
In a dish, add in the garlic powder, red chili flakes, coriander seeds, black peppercorns, salt, cardamoms, and turmeric. Transfer to a blender jar and grind in blender.
After 4 hour of soaking chicken legs, remove. Coats the legs with the grinded spice mix powder, getting it into the cuts of chicken. Transfer legs to a pan and cover with lid and cook on medium heat for 10 minutes, then reduce heat to low and continue to cook for a further 20 minutes. Then transfer chicken to a dish. Also pour out the remaining liquid/broth into a bowl. Add the red food color to the liquid/broth and mix.
Place a tawa/griddle on medium/high heat and place a wire grill/rack on top. This will make space between the chicken legs and tawa and allow to BBQ the chicken legs.
Brush the colored liquid/broth onto a chicken leg. Then place the chicken leg onto the wire grill with the brushed side down, and now brush the top side also. Repeat with rest of the legs. BBQ each side for 7/8 minutes.
