The 1st time my husband visited Philippines, I brought him to this Lugawan in my hometown and he just can't forget about that lugaw that he had. When we came back abroad, he always misses it and I am not really a fan of lugaw or arroz but I tried cooking it and he just loved it. Now, lugaw and arroz became staple. 😋 even I got hooked 🤣🤣
I stir fry my ginger and onion with the chicken then pour the rice and just let them fry for few minutes then I add water and let it just boil on it's own for like almost an hour. For it to be yellowish, I add a lil bit of turmeric powder.The toppings do the wonder. Boiled eggs, fried garlic, chillies, fresh ginger, fried chicken skin and spring onion. Anything I can add?
Check if they sell bulalo too, if yes then it's the beef/bone broth they used for the arroz caldo.
I'll steal each of their ideas:
*Erwan's:* loved that he mixed 2 types of rice, mixed with kasubah and roasted whole garlic on the side
*JP's:* loved the crispy chicharon skin of chicken inasal(as substitute to traditional pork chicharon), roasted chicken inasal w/ annatto garlic oil, fried ginger on the side and that crispy roti as a spoon
*Ross's:* loved the egg yolk cured in soy sauce as toppings
*My input* is probably just the chicken broth which has to be: chicken bones & feet, shallots, garlic, ginger, scallion, fish sauce, siling labuyo and most importantly: *lemon grass*

I love the simplicity of Sir Erwan's arroz caldo, something that I look forward to eating. I love the authenticity and staying true to its nostalgic flavors. 😁
Actually making this as I write, garlic onion ginger sauteed after browning the chicken, sauteed the rice a little before adding the water, put my fish sauce just as little bit for now to be absorbed by the chicken then add my water, it will turn a yellowish color without any additional coloring, let it cooked the rice until a bit mushy, by frying the rice a little it will crack the rice open and absorb the broth much better. I use Spanish saffron here in the states season with salt, black pepper and more fish sauce to taste. I'm lucky that I have a calamansi tree in my porch. Eat up and enjoy the nostalgia from having this soup growing up.

Erwan version is the exactly recipe and process that i made 8 years ago in Dubai.. I have goosebumps when erwan confit the whole garlic the essence of French Filipino. The other 2 Chef is not ring my belly but respect for the creativity,for me Arroz Caldo is a very simple dish that you appreciate in simple way to make it. Good job Erwan!!
Erwan's arroz is more of the authentic one I must say. That's also how we cook arroz at home. Even though it's hot here in PH im craving for some arroz caldo 💖

This is my favorite food in our house ...we eat this during rainy season, when am sick, feel blue😊...and my colleagues request me to cook during breaktime.I love it much😊
Commenting at 4:30 😋 saffron is pretty affordable here in the USA , however they do carry “safflower” as a substitute . They sell safflower for cheap at the Asian markets .
iba sa amin gisa muna bawang sibuyas then luya then lagay ang manok sangkutsa ang tawag namin pinapalabas ang pawis ng manok. para lumabas ang lasa ng manok then lagay ang hinugasang bigas. kasama ang sangkutsa n manok. low fire kasi masuaunog ang bigas. stir occassionally for 5 mins. then lagay na chix broth. boil it until the rice is like porridge. I have special recipe for this put paella powder or paellero carmencita powder or saffron para sa kulay at ibang lasa. season with patis and pepper. slice some kalamansi and prepare fried garlic and chopped some chives or spring onions or scallions put on top of Arrozcaldo. Tip : be generous in adding ginger sa recipe it will add aroma
Hi I live in Melbourne, I also struggled with calamansi. I used to use lemon until I decided to try lime. And yes! It’s much closer to clamansi, so now I use lime for anything that needs calamansi. 😊
Arroz Caldo is my fav thing to eat when I’m feeling sick. I like to put turmeric, ginger, lemongrass, garlic and galangal in mine to up the health factor.
Chefs like to make an interesting version of traditional dishes but nothing beats the original taste and flavor of food that our grandmothers and mothers cooked. So Erwan is the winner for me.
I hope can make more of these collabs. High and low priced versions, and using his influence to help other cooks/chefs too with this 💯

nice comforting food specially for both of you who used to take care your child in no time because there has no specific time when your child need already change diapers or need to feed but it seems your princess was good girl and nice child like her parents because still you can insert this task in your daily routine although i know taking care infant i am right i was no sure if that how it called from age 0-12months old was not uneasy job thats why miss anne was right planning to build own families make sure your totally prepared physical mental emotional and financially because building own family was a responsibility and a commitment there has no turning back 😊

if that's a competition the third "chef" would suck like the most expensive brand of vacuum cleaner. I'd go for my boy Erwan and chef JP Just my opinion but the third one looks like your average steamed rice with lots of water with bland chicken breast and some fancy smoked chicken.. Just saying...

@Erwann we have calamansi here in Mebourne..you can buy the "dwarfed tree" in bunnings or in nursery but ours we bought in Laverton market at namumunga na..better yet baka may mag-share sa inyo ni Anne na mga neybors nyong pinoys😍😍😍 goodluck😊

Best rice for porridge are the short grain rice mixed with 1 part malagkit. Of the three version of arroz caldo, erwan's version is the closest to traditional arroz caldo. The other two are too out there
Omg! My mom cook aroz caldo just like how you cook it. More ginger with the same slice, Mix the glutinous rice and ordinary rice. (some vendor here, thay just use either, without mixing it)

There are loads of different ways to cook different pinoy dishes like you said and I believe that every version is as tasty as the others. Your version of arroz caldo is the same as ours in Batangas and that looks like how our lola cooked it. 😍 garlic and saffron! 😍
I use rotisserie chicken after sauteeing garlic onion and ginger. Makes a big difference with the taste as the chicken was already roasted and cooked.
Erwan’s version is the same way I prepare arroz caldo. I put whole hard boiled egg on mine. I can say I know how it will taste, delicious!

Erwan's arroz caldo for me is the winner here, not because this is his vlog, haha. But because i honestly think his technique is better flavorwise. That seared chicken and that squeezed garlic ( topping) will definitely add flavor to the dish.. Second place is Chef Jaypee, I like his presentation though...and that fried chicken skin (omg) is definitely a treat...i just dont think the crispy rice works. hehe.

Try cooking arroz caldo with lemon grass or tanglad...lemon grass removes the "lansa" of the chicken (especially if the chicken used is white leghorn or chicken usually fed with commercial feeds)...tanglad also adds flavor and that appetizing aroma...whenever i eat arroz caldo, i always look forward to that lemony, hindi nakakaumay taste of arroz caldo....you can add anything to arroz caldo, you can cook it many ways, and lemon grass makes it complete...
