About Me:
Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a 5x author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing Western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.
Keith is the co-host of the More Than Masala Podcast as well as the chef owner of Aatma Restaurant & The Farmers Dinner. He is also the author of 5 best selling cookbooks

Dr Kurush, im from Hyderabad. Accidentally i saw Mr.Keith's video wherein he talked about the gujarati lady who owned a shop.
And then i started following him.
You are an amazing personality with passion for cooking & PhD in archeology.. Wow.. what a profile.

Amazing Keith! What he said about authentic food & appropriation is so true!
Also about the differences in oils, souring agent & spices..! That really changes the 'cuisine'! I can't even imagine Dahi/yogurt & Mustard oil in any of my meat curries/rassa.. But in the North it's a must! Similarly North Indians don't use kadipatta, mustard seeds, tamarind & kokam, groundnuts etc. as much as we do..! These things make all Indian regional cuisines so unique & so 'tasty'! 😊🤩

You are “The perfect Student” Kieth.
A few takeaways from the show for me which I believe.
Spend 15 days of a year in a different part of the country. The food (even the same dishes) will taste a lot different. Local ingredients and more importantly water make a whole lot of difference.
Then his take on authenticity is bang on. There is nothing authentic. It’s only good memories associated with that food which makes it authentic and taste the best in the world!!
Then lastly as Javed Akthar once said if my mother was the best cook and if my father said his mother was the best then the corollary is that we are all eating shitty food. We all know that’s not true… isn’t it?

What does Tarla Dalal have to do with this? Hercontribution is enormous but she was a vegetarian Gujarati, I am a very happily carnivorou Parsi and no Tarla Dalal isnt my mum :)

More than anything else, this is a fantastic fantastic representation of what respect is.. respect for the teacher and the student, respect for the trade, respect for the cuisine, respect for history, respect for time and the change it brings with it.. more than anything else i am humbled by how down to earth two extremely knowledgeable and accomplished human beings ( in their trade) can be and talk about differences and similarities in such a fluent yet simple discourse which will put a lot of parliament debates to shame.. nothing but respect to these guys

A lovely interview. When you come for those short stints around India, make sure to emphasize on the linguistic diversity that protects a local cuisine from homogenization, the history of that particular region's external exposures and tools and techniques, and the geographical zone that links it to its supply chain of ingredients. It is always good to remember that India is many countries and many centuries combined in a single package.

👍🏽, totally true, check out each state/region, each has its uniqueness. I myself haven't tried all the Indian dishes, not even close. But I do know, judging from what I have eaten so far, it will be damm awesome.

Great video! But I'm a little perplexed: Is a badly made Beef Wellington made in Wellington NZ considered authentic?
Hahaha. It is.
But is it an authentic Wellington as the 1st Duke Of Wellington intended, or just a piece of beef wrapped up in some pastry cooked badly in Wellington? Clearly cooking is a complex art, no more so than its nomenclature! Someone really needs to work this out!
@@MineshShah authenticity is subjective. This is what Kurush ji was mentioning. You may make it in a way that is typical to the dish and it could even be bad but authenticity subjective.
Yes. It is authentic. Is it good? Maybe. Maybe not.
The problem we face is when we say if a dish is authentic or not based on who or where a person makes it.

I am guessing you are not in India, i would like to request you to search for north east indian food.. while central and northern part is heavy on vegetarian recipes north east being a remote area the variation is completely different especially in meat section...
