About Me:
Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a 5x author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing Western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.
Keith is the co-host of the More Than Masala Podcast as well as the chef owner of Aatma Restaurant & The Farmers Dinner. He is also the author of 4 best selling cookbooks

What an amazing host; he knew exactly where to take you. Lalbaug is famous for its spices in Mumbai. Every Maharashtrian, and even people from other states, come here to have spices especially tailored and custom made for them.
Ishan is a good friend of mine and truly someone who understands the city. It was incredible
There is custom in Indian families to make pickles and fresh masala for an entire year worth of supplies around months of May and June before rains start. People of Mumbai flock in huge numbers in Lalbaug wholesale spice market during that time as we get good prices as compared to other places around the city.
I know Ishan and he's like a friggin' encyclopedia of food with arms and legs.

In Kerala another variety of tasty vegetable samosa available, also will get it the same in the UAE .
Kerala (south India) is the home of spices. Visit Kochi city to see the enormous freshly produced spices. You can also see spice gardens where all the spices of Indian cuisine are cultivated.
Yes but all states also have their many local spice mixes. So tasting everything is equally important. Example: Mustard Base in Bengal, Coconut base in MH, onion base in North etc.

You have been given correct advice to ho uo Lalbaug. Every 5 years i go home to mumbai anc bring my sgare of spice, even after 5 years it tastes the same. Keep in glass bottle and store in pantry not fridge. If u have a pantry in basement u coulc jeeo there. Buy goda masala, kanda lasoon masala. Go to khamkar masala shop. U can customize to your taste and he can educate you too. Authentic pounding.

I exactly know that smell @6:33!! :) Has been the yearly summer ritual of me & every other family around me to make our own Masala / Spice mix!
I & my wife brought 2lbs from India last year.. We spend it more carefully than $$ !! :D
I do make my own here but it's not the same! Since you are there in Maharashtra do try authentic sub-regional cuisines.. Kokan (Coastal) area fish & crabs & shrimps' varieties.. Food of western Maharashtra mainly Misal, Mutton (Goat) Rassa with Millet roti.. If you travel to Kolhapur Tambda (Red) & Pandhara (White) rassa is a must! Pohe & Puran Poli (Sweet Roti) is consumed all across the state! Again All The Best & may you fall in Love with Indian food all over again!

You went to the best place of Mumbai to buy spices. They make instant garam masala over there, you have to provide home spice recipe/list. You missed famous malvani seafood restaurant Dutta Boarding, 2 minutes walk from lalbaug market and Maharashtrian snacks centre Ladu Samrat. I hope you try seafood in Mumbai, as it is coastal city don't miss fried Bombay duck and parwns koliwada.

You'd be surprised what spices you get here in the USA especially New Jersey. There is an isle just of Acchaars -- pickles in the Indian grocery store here.
In Bombay -- try seafood -- esp Pompfret, Rawas - Indian salmon, prawns and last but not least Bombay Duck -- it's a fish. With the seafood -- gulp down a glass of Sol Kadhi.
In fish try both -- fish fried in semolina -- Rawa and fish curry -- coconut based. Go for the traditional rice -- which is parboiled. They might try to offer Basmati. Refuse.

Would you please try the spice "KababChini"? unusual types of material. Still, the addition of Kabab chini to Biryani enhances its flavour. It's known as a secret Ingredient by some.

Don't buy achar from market, it contains vinegar and citrate as preservatives. Get homemade achar from acquaintance.

There are some wonderful home made brand names for aachar you will find in most super markets and stores also such as Mother's Recipe, Bedekar pickles, etc
....they come in bottles as well as tetra packs... enjoy!!🫶

@@chefKeithSarasin Mostly, yes. Nowadays most pickles especially those sold commercially have preservatives. Best is homemade, no vinegar or citric acid.
