I used to do a 7pm to 7am shift 5 days a week for almost 4 years. I gotta say it was a hard way of life when the whole world runs in the day. You dont quite realize how the night worker has to go out of their way to try and get a good sleep and life balance. Also, those 2 and 3 am thoughts of sleep could be the worst, but it was also peaceful at times. Thanks for working hard brother - respect you for taking your job very seriously!
Here in the UK we have very few proper barbecue restaurants (Bodean's is NOT proper BBQ, to say otherwise is like comparing McDonalds to the Savoy grill!!!). So that I can have proper BBQ all my smoking is done overnight, with serving up around 2pm when my family descend on my house. I used to stay up, barely sleeping so I could get up every hour or so and check, but my partner bought me a Maverick. Changed my life (for those few nights each year I smoke a big chunk of meat!). I love seeing a barbecue restaurant smoking meat overnight for the next day like that... they cold probably work out another approach, but this is what they've always done and it's best. Love it.

i have an old friend, ok i’m old too, but my friend owns a bar-b-q way out in the country. i’ve spent a few nights with him cooking and drinking, some coffee too, but a much looser environment. he would normally do 5 whole hogs for pulled pork a night, 2 or 3 nights a week. he raised, butchered and sold his own under the name “ole barn bar-be-que”. never would tell us what was in the secret spices but the fires were pure hickory and oak with pecan to finish - no charcoal... nice job you’re doing!
That is awesome work, and you'll always remember that no matter how old you get. I remember my job at a restaurant with all the food prep and getting ready for the breakfast, lunch, and dinner rush.

In Switzerland, you would need a permit to work at night... Chances are low that you'd get it for BBQ. BTW, in Switzerland you need a permit for everything... Some trees are documented and if it dies, you have to replace it in the same place. But it's a great life, no threatening police or government like in the USSA.
BBQ is one of the most time-intensive cooking methods. It's amazing how much work goes into it, but the results are just insane. If you have never had some proper brisket or ribs then you are really missing out.
@@SOLDOZER Clearly you've never had decent brisket. A friend thought his Traeger brisket was amazing until he tried one off my 500 gallon offset, fueled with nothing but oak.
I did the pit tour at Terry Blacks in February. It was great talking to the cook. He was more than willing to answer every question and share some of his favorite information.

I cooked in Vegas for 25 years and I understand all aspects of the kitchen and I would say that you did that operation very smoothly I know you may have had some practice but I thought it went very well !!!! a job well done 😀😀 😀
@@Charsi_Escobar Maybe, some things you may already know. Try and keep the temp from fluctuating, adds cooking time and risk of stall if it goes below 175f. I cook at 250 but be careful going above that. You want a clean smoke, able to see through it. A thick smoke will make it a lil bitter. Try not to open the lid too much, the meat is still in there, usually.I'll burp it a lil if the temp gets too hot after adding wood. Around half way through cooking time spray them with apple cider vinegar, he does this in the video. About 8 hours in I wrap them with butchers paper and place them back in the smoker. Keep the thick part pointed toward the fire and rotate as needed with the ones farther from the fire. Cook time is about an hour per pound. As far as wood type thats more of a personal preference but I use kiln dried post oak and throw in a piece of mesquite for added savor. Some use pellet smokers but I prefer old school wood fire. I buy pre trimmed brisket, ribs are a whole other story. Thats all I can think of at the moment.

just had it today April 30 2021 total experience was excellent !!! no complaints!!! 20 minute line while enjoying 2 beers great service and food was absolutely excellent!! I tried going to Franklins and they were sold out for the next 3 days. In my opinion that’s absolutely unacceptable!!!! Gotta give it up to Terry Blacks BBQ for making it happen the right way!! And being absolutely delicious!!!
Touche, yea he's definitely been doing this a while. I used to be a cook, everything he did was spot-on, no mistakes and food prep was clean. I'd hire him any day of the week.

Good ‘ol Texas. In El Paso there is Rudy’s BBQ on one side of I-10 and Krispy Kreme on the other side. At about 4:30 am while driving, you catch both of those smells and it’s amazing!

just had it today April 30 2021 total experience was excellent !!! no complaints!!! 20 minute line while enjoying 2 beers great service and food was absolutely excellent!! I tried going to Franklins and they were sold out for the next 3 days. In my opinion that’s absolutely unacceptable!!!! Gotta give it up to Terry Blacks BBQ for making it happen the right way!! And being absolutely delicious!!!

Touche, yea he's definitely been doing this a while. I used to be a cook, everything he did was spot-on, no mistakes and food prep was clean. I'd hire him any day of the week.

Would be an honor to work this shift. Youd have to be the most respected and trusted employee. The entire sales day depends on everything being perfect. youd have to understand the entire process.

Good ‘ol Texas. In El Paso there is Rudy’s BBQ on one side of I-10 and Krispy Kreme on the other side. At about 4:30 am while driving, you catch both of those smells and it’s amazing!
