She was the pitmaster at goldee's (which was named best barbecue in texas while she was the pitmaster) before opening her own place. So I think she had some inclination her food was going to be a hit.

Barb was still working at Goldees when I took the class there. You could tell she knew what she was doing and they told us she was taking out on her own soon. What a inspiration to young women in the USA!
Can't wait to try it! My boyfriend and I drove from South Austin to get lunch there on a Sunday a couple months ago, but you had already sold out, which speaks volumes. You ladies still greeted us and gave us a complimentary dessert and green juice since you had sold out. (Both were great by the way!) We thought that was so kind and generous of y'all! We will make it back sometime to try the meats 😊😊
Wow. I am root'n for Chuck and all involved with Barbs B Que. Heartwarming for sure. I like to see and support people who love what they do, are good at what they do and can make a great living at what they do. no matter how many smoke point videos i watch, i still have no clue what goes into trimming the fat off a brisket. you'd think after literally hours of watching, you'd pick up something! wow what an art
Everyone does it differently. So do what you think is good. There is no wrong way of trimming the fat off other than not doing it at all. Trim what you think makes it look good and thats probably good enough.
I mean she kind of covered it, the harder it is, the thicker the fat. Find a spot with a 1/4 inch layer, and get a feel for it. Trim to feel. It's easier on higher quality briskets. Lower quality cuts are a bit harder since the fat cap is often thinner, but you still need to trim the oxidized layer.
There is hot chocolate and it tastes good. Then there is hot chocolate using these Mexican blocks that tastes amazing. Imagining them being used outside of their traditional use makes you imagine how wonderful it must taste. Brings a tear to the eye of anyone who grew up with this hot chocolate. This is because it brings back childhood memories of time spent with your parents or grandparents. Hope I explained it.
So proud of her. She had a vision and a dream that she said she was going to open a place and she did it. I know success is already hers, as she's passion driven, not money driven.

Ngl green spaghetti has always been a well kept secret in hispanic communities bc it’s so darn addictive yet so easy to make. In my personal experience it’s always there for Christmas, new years, and now thanksgiving. I am happy Chuck put it out there for everyone to try, it was about time someone did.
You must have only watched 4 minutes of UA-cam in over 10 years then. There’s nothing groundbreaking or revolutionary here. Trimming for smoke aerodynamics? Using lots of spices instead of just salt and pepper? Tipping to remove the sweat pools? Smoking at 250 instead of 225? What kind of tips did you learn that you didn’t know already from 10 years of watching other pit masters?
I honestly agree with that, they don’t ever give you the little tips and tricks like the sweating of the brisket and not letting it wash the seasoning off and just little tips like that.
Can vouch, eaten here earlier this year. Fantastic food, and the ladies working here were all super nice as well. Their sauce is to die for. They were still workshopping desserts and sides when we went and told us as much but everything was still so good. It was worth the drive south and the hype! Happy to see her getting attention they deserve
I instantly recognised this girl from the previous Goldee's video she was in and she said something along the lines of "you either get levels of ownership in where you're working, or you start your own business up", glad to see this talented young lady go out by herself, she was the pittmaster for when Goldee's won the award, so she clearly has a future! Nice video! Also not sure if you realised but you can see it's a Goldees smoker at 17:52!

I've eaten at ~10 different BBQ joints in Central Texas. Barbs is easily one of the best and a strong contender for the next Texas Monthly Top BBQ list. Line can take a long time to get through but it's worth it.
Relax, That list is extremely subjective and it's only one man that determines who's on that list anyways. That man hasn't even been to every BBQ place in Texas, some places have been thriving for 50 years and he hasn't been there once. Let that sink in.

When I saw her in the Goldees documentary I knew she was something special. I am totally shocked she's only 25. VERY wise and knowledgeable for being so young. She speaks like a 50 yo pitmaster. My favorite part is that she makes it a point to make sure everything tastes different. That's huge! It might cause an issue with consistency down the road but for now it's genius.

I grew up in SE Texas in Beaumont, and we had plenty of BBQ places to choose from, my personal favorite being Patillo's on Washington Blvd, which is still open, and has been since my Granddad was a young man. I live 600 miles away from there now in Lower Alabama. Lockhart TX is quite a drive for me but I will definitely be going to Barb's to eat in the sometime near future! That brisket looks amazing.
