Glad to see these pie. I first had bistro in the Rico Grande valley in Texas. I tried to recreate it and cut stew meat into small pieces and seared it then stewed it slowly with pico de gallo. It is delicious, but I will try your recipe! Looks so delicious

A friend just got back from work travel, and said her husband was making her guisado, she is half Mexican, but he went to culinary school and lived while in New Mexico. So I thought she was trying to say Carne Asada😂 She said no, no no this is like a Mexican stew and they were having black beans on the side and some rice . Hey Arnie, next time you cook fries in beef tallow, try this. Boil the potatoes halfway boiled. Not all the way. Take them out of the boiling water and immediately put them in ice water. Then, heat your tallow to 325. Fry them until they just start to get folden brown. Take them out. Let them cool down. Then fry them again at 350 until they are a golden brown and very crispy on the outside and perfect texture in the middle. They wont disappoint. The best fries you ever had. Lol.
Coming from Louisiana where seafood boils are what we do, I had doubts how the Blackstone Griddle Seafood Boil would come out. Not only did it have all the texture, taste, and layers of flavor...it had my family and friends. If you don't mind, I'm going to use this at the next Scoutmaster's cookoff. Ya heard me!

You said that was a flat steak it looked like skirt steak to me. Would that be the same thing as flat steak? Just different terminology because skirt steak is delicious when cooks with Mexican seasonings
Arnie calls it "fajita meat", but that isn't a cut of meat. It looks like he is using skirt steak, which is not in most of the stadard stores I can shop in (kroger, safeway, albertsons). I have seen it in Whole foods. Substitute flank steak, but it might be a bit more tougher as it is thicker and leaner than skirt. Of course that would probably work with sirloin, tri tip or new york, but it starts to get pretty expensive with some of those cuts.

Flank steak normally cut into thin slices marinated in soy calamansi and then sauteed in lots of onions. My curiosity is and question would be, has BISTEC been used traditionally in mexican or mexican american culture? or has it just been recently adapted?

I think the cut is flap meat or flap steak also called sirloin bavette it has a few names. It is listed on the kroger website.
