A local Mexican restaurant (St. Louis Missouri) has Alambre. They lay ten corn tortillas (like a dice, in the '5' pattern, but double stacked). Then, they pour the ingredients over the top in a big mound. So you pull up opposite side of the tortillas, and you're ready to go. Recipe looks pretty similar. YUM!

We have a restaurant in Oxnard and Santa Barbara called Cuernavaca, which is where my wife is from. They make Great food. Their Al hambre especial is FANTASTIC! beef, ham, chorizo and a crispy pork (not sure what cut). Made like yours on a griddle with queso Oaxaca. Fantastico! Hey love you recipes and your enthusiasm. I have friends from around the world, each month we make their authentic dishes. It's a beautiful bonding experience, better than going to the restaurant, you can do it. Cooks are made not born. Not surprising you haven't seen it before -- Tex-Mex and Cal-Mex food has some distinct differences. The reverse is probably true for Texans trying Cali food.
I grew up eating tortillas and butter and a friend of mine made me some fresh tortillas and seen me eat it with butter and laughed said wow you eat it the way we do( shes mexican) I'm white. I laughed and said, "Is there any other way. As a Texan it's how I grew up. Anyway this looks delicious 😋
