The only video with good clear instructions and advice. I really liked the way you said the cake has to be cold in order for the glazed to be on it properly. None of the other similar videos mentioned anything like that. Agar agar can be used as a substitute for gelatin, though I'm not sure of the exact quantity you'll need as I've never tried it with this recipe before sorry! Agar agar is stronger than gelatin so you will need less agar agar, but it will be best to search for the correct amount to substitute for the quantity in this recipe. Hope this helps :)

On special cakes such as these, your beautiful “Sugar Sheet”-can you cover if any traveling issues? Or best way to transport some of these cakes. I hope that makes sense. I appreciate your work. Thank you so much for your feedback :) A 30 minute travel time should be okay for a mirror glazed cake, just make sure it's been chilled in the refrigerator beforehand and that the a/c is on in the car. Hi Anna! Thank you so much :) and great question! So you totally do not need to pour that much glaze over the cake - I just went a bit overboard because my white wasn't coming through at the beginning so was waiting for the colour to come through haha but you only need to pour enough that it covers the cake and then you can reuse any of the glaze that falls to the bottom for other cakes :). If you're only glazing one cake that is 8 inches or smaller, then 3/4 of this recipe should be more than enough :)

Hi there! Candy melts are a compound chocolate, which basically means that it doesn't have as much cocoa butter as real chocolate - making it a lower quality tasting chocolate (and not a 'true' chocolate). And I have the temperature instructions up on my blog which is linked in the description box (I think I mention it in the video at some point too) :)

Yay so glad to hear that! :D And left over glaze can be kept in an airtight container in the fridge for a few weeks, and then when you want to use it just reheat it and wait for it to come to the right temp and pour it over your cake :)
Thanks for this easy to follow glaze recipe. I’m planning to make a double layer 8” cake. If I cut the glaze recipe down by half, will it be enough to cover my cake ? Reason being, I don’t know what to do with all that left over glaze, and don’t want to waste it. TIA for any advice.

Hi Sonia! Any cake will be fine, but it will need to be coated with some kind of buttercream before pouring the glaze on top, otherwise when the cake gets soft the glaze may seep into the cake. And yes it is shredded coconut :)

You're welcome Faith! Glad to hear you enjoyed the video :). Hmm this really depends on the weather conditions. If it's very hot, then probably only a couple of hours (but keep in mind your glaze will soften). If the weather is cold, then a few hours should be fine :)
Hi Mary! Good question :). So you only let the mirror glaze cool down to 30 degrees celcius so it is luke warm. At this stage the glaze is still a liquid consistency that you can pour. Also, the amount of gelatin added isn't enough to firm up the entire glaze, but you will notice that after you've poured the glaze and you let it set, it does firm up a bit. Thank you! :) Yes you can use coloured gelatin, and unfortunately to achieve the blue colour you will need to use white chocolate as brown chocolate is too dark :)
I always go with flavored, colored gelatin (in Germany I can get almost every basic color besides blue, even halal or agar agar) with white chocolate and I just add color or many colors to achieve a desired result. But dark chocolate only works for brown or black glaze. I once used milk chocolate and added lots of dark blue gel color hoping it would get dark and saturated faster. All it did was becoming rather dirty, muddy blue-brown soup as if a Smurf peed in a pond. Unless that’s what you’re going for it’s not worth trying, use white chocolate and you’re going to be fine.

To be honest I'm not too sure as I've never tried it with glucose syrup before, but I imagine the glucose syrup would give it a nice shine (similar to the gelatine and condensed milk in this recipe!). Thank you Vanitha! Liquid colour can be used but not too much as this may change the consistency of the glaze. Because you can't use too much, the colour may not be as deep, compared to when using a gel colour :)

You're welcome! :) and yes you can still do this without the white, it's just the white that runs through the glaze will be slightly yellow - some people use a tiny bit of purple to counter the yellow colour to make it more white if you wanted to try that option :)

If you use cooking/baking chocolate then it won't be as sweet because cooking/baking chocolate has little to no sugar in it

Hi there! You can use agar agar, but you will just need to use less of it as it's stronger than gelatine. You should be able to find a conversion calculator online that will give you the correct quantity to use :)

Yes sure! Just let the glaze set for a few hours in the refrigerator before adding the white chocolate ganache :)
