I can't speak for every area of the country where costs of living differ, or for specialty joints where they make their own mozzarella and such, but in general there seems to be two types of pizzerias around me. You've got the big four serving fast-food for $8 a pie (often with coupons), and you've got "high-end" pizzerias charging almost $30 a pie for 3 topping pizzas. I'd love to have something in the middle. Give me a decent pizza for $16.
I love this setup, great video. I really love the folks eating for their pizza’s, I love their craftsmanship. That said, I think there’s an opportunity to do something bigger than your individual shop, but it’s about scaling up the process and methodology. Frank Pepe’s seems to have been able to recreate their process into a few locations across New England. They must be doing something right because it’s one of top quality pizza’s I’ve seen expand across states.
Pizza chain pizza doesn’t make money necessarily because their pizza tastes good. They make money from all of those deals that they have that smaller businesses don’t offer, delivery is also another big thing. Some smaller businesses don’t have a large delivery range or don’t deliver at all so some people are forced to buy chain pizza. I understand that the overhead in a small business is enormous, and the owner is usually present or family members are working there to see that the quality stays good. But the chains get breaks on bulk purchases and their employees are just doing the bare minimum to get by so there is no quality in their product. I buy from my local shop as often as I can, and avoid delivery from the big chain pizzerias, and I know these four guys probably have the best pizza in the world but they don’t deliver to me in Reno 😅 Also, people eat at Olive Garden and it’s disgusting Italian food , Chili’s is supposed to be barbecue and it’s disgusting, and I don’t even know what Applebee’s is supposed to be but I worked there at one point and I know they microwave everything… but those places make money so that tells me that people just have no palate. 😅
I think Little Caesar's is, by far, the best of the big four chains. In terms of quality it's no better than the rest, but the difference is they PRICE their product appropriately. You can walk in and get a hot large pepperoni pizza for like six bucks. The same pizza at Pizza Hut would probably wind up being like $20 or more, which is absurd.
In my area, a Little Caesars Extramostbestest pepperoni pizza is $8.79 after tax. Pizza Hut's pepperoni with extra cheese and pepperoni is $17.04 after tax and has less cheese and pepperoni than the cheaper Little Caesars pizza. Also, while Pizza Hut does taste a little bit better, it doesn't taste 9 dollars better. I can literally get two pizzas from Little Caesars for the price of one and still enjoy. It's a really good value and still tastes good (in terms of fast food pizza).
In the northern part of MN you just don't get a lot of populations who bring their authentic food to the table. We lack Italians and Jewish folk so a deli or a good za is harder to find. If you want some fried or smoked fish to die for or the best wild rice soup you've ever had, got it in spades.
It’s a bigger problem than pizza, it’s all food in America getting less authentic from the way the ingredients are grown or made. Wish we stopped cutting corners and were more efficient.

Supply and demand curve with the price at the lowest price vs the highest price is what should be shown here. If those pizza places merged maybe they can get their price down to make “good pizza” available to the masses.
