I wondered about their lifestyle their food, culture because they looked and behaved like more white than desis. Stumbling on your channel I’ve realized that you people are very much Indians than anything else. Our cooking is so similar. Thanks for posting your recipes
I like your style very much, especially using vessels like handi and parat (flat vessel for kneading the atta), banel (wok), and typical ladles used in India, using clean hands (and not creating more garbage with disposable gloves) to marinate chicken. You are lovely 😍

Hi you're like me with your rolling the dough,you can make your dough dance while rolling it out, you are a good chef, I give you this title,the world does copy and paste abd leading to the wrong directions, but not your skills thumbs up
One of my English teachers in school was an Anglo Indian.. Francis James Sir.. huge built 6'2 tall man.. could kill anyone with his one punch.. he actually used to threat children just to keep them in order... but he was one of the kindest men I know.. I have been very fortunate that I grew up in eastern part of the country where there is still a decent number of Anglo Indians living.
I am a fan of your channel, however I think you have missed an important element to a Kathi Roll. It may be more local to Calcutta but the roll would have a fried, thin egg pancake, laid directly over the paratha before the filling. The filing would not have had a "marie rose" sauce but a lightly chilli'd and mango chutney pickle sauce. Not meaning it is better but the name Kathi means something a little different to me. X
