I literally just put my plate in the sink and came out to review this recipe. I'm sure the meat was fully cooked after the second heat cycle. I wanted the BBQ sauce so I followed your directions. The meat fell off the bone and tasted awesome. The taters were perfect. Next time I'm going to throw ears of corn between the steaks for the last heating cycle. Thank you for posting this damn tasty, hearty meal.
I have a couple of these marinating in the fridge some Italian dressing then I added some Chinese five-spice and some hosin sauce and a little bit of Lea & perrins teriyaki sauce I'm a splash of apple cider vinegar. I will cook them tomorrow just like this. And I will make sure that I dry them out well before sticking them in the oven and I will make a sauce out of my marinade
Well Tom the pudding is fast to make as long as you do not have to video it. I know that you realize what I am talking about. So much easier and faster to cook without a camera.

I tried it with 3 rounds of 35 minutes at 325 and it was to much, just dried it out. I also tried it doing a 35 minute cook, saucing, flipping, saucing again and doing another 35 minutes and it was perfect. Both were with nice thick pork steaks.
This recipe is amazing. I have tried it with porkchops and steaks as well. Just make sure your steaks are no less than 1/2 inch and use additional liquid while baking. Also, watch the third round of 35 minutes as may have to reduce the time depending on the cut you are using. Buen probecho!
I re-read the recipe, and the re--watched video and still don't know what went wrong. Meat was so dry I couldn't swallow it without liquid and the potatoes were hard as bricks. whole mess went into the garbage.
