My youth summers on the family farm in south central Kentucky, my Grandparents had at every supper corn bread, in fact it wasn't supper until the corn bread was done. Cornbread was as a staple as water.
Hi, new subscriber here. Enjoying your videos, stories, & cooking. One thing I do know about baking is this: that cornbread is what you call a "quick bread." Uses baking powder or soda for rising, instead of yeast. When the powder comes in contact with liquid, there's a chemical reaction; it creates bubbles and causes your bread to rise. Your mix probably had enough rising in it. The problem is when you stir it as much as you did while mixing, you break too many of those bubbles, causing a flat or dense product. This is true for pancakes too and, say, banana bread. Next time, figure 1 cup of milk for this recipe, beat your egg a little first & combine your wet ingredients separately. Then add them to the dry ones and STIR TILL JUST COMBINED. Then STOP! Dont change anything else in your recipe, just tweak the method a little. Try it. I think you'll like it.
I love cracklin cornbread so I'm sastified I'll like this have cooked cornbread with cracklin and cream corn and cheese it was great will be trying this
Cabela is a sweetie, I hope your wife visits more often, and that corn bread deserves to be called a meal! I have been trying to copy my mom's hot water cornbread, no luck. Can't find the plain yellow corn meal around here... After we got chickens she put an egg or two in, poured it into either a skillet or a ribbed iron muffin pan, and stuck it in our old Rebecca Washington wood range (a neighbor later stole it from storage and gave it to his son), and you had something that'd stick to your ribs! Put some of her home-made butter on it, and go to town!

stop flying tour drone over my property! lol....just made something similar last weekend. had 1 andouie sausage left in the fridge...so I halved it, cooked it in the dutch oven, then diced it up and added it to corn bread. I also like adding a smidge of sugar to my mixture. also a tablespoon of mayo. you dont taste it but it helps keep it moist
My mother would put torn up cornbread in a glass and add either "pot likker" or buttermilk. Me I prefer my cornbread to be thin and crisp (well done) with lots of butter. I'll have to experiment and see if I can make it thin in a Dutch oven.

I have never tried adding creamed corn but used ordinary canned corn, drained. I bet that is really good. Thanks for the idea! I have a question. When I bake using my 10 inch Lodge Dutch Oven, when it is time to remove the lid to check the contents, I can pick up the whole Dutch Oven using my lid lifter that looks just like yours. Just a tap on the side of the lid with most anything metallic will cause it to let go. With that being the case, it is a lot harder to keep the ash from the lid from going into the food. What would you do? I have just kept tapping with the Dutch as close to the ground as I can without touching the ground so all the weight of the Dutch is hanging on it. What would you do?
I think the weight of the creamed corn kept it from rising as much. Additional BP+BS would help lift it, but I bet it tasted great! Best of luck with beautiful Cabella!

Great video as usual. I have to disagree with your assessment of batter consistency. If it’s mixed to nearly twice as thick as yours and poured into the hot DO or Skillet with out letting it sit, it will have a better rise whether using self rise or AP. I’ve learned that over mixing is also to blame for poor rising. I’d like to share my bacon on technique if I may. Grate a medium onion and squeeze the juice out of it between some paper towels and add to your batter. Cook half strips of bacon in the bottom of the skillet/DO and when 1/2 done pour your mix in leaving the grease and bacon in place. Pour the batter in the hot skillet over the bacon and cook as usual. The bacon is crisp and the grease fries the bottom and edges up nicely. Give it a try, you’ll love it!

Unfortunately You can’t get Martha white products here in Texas. I understand that Martha white flour is the way to go with southern biscuits. I will be using jiffy cornbread mix to make this dish. Cabbala is cute. I wish UA-cam would allow photo comments so I could put send a picture of my Roxie. She is a schnauzer mix. Have you figured out which recipe you are going to use from the cookbook? My favorite in there is a peppermint cake. I believe is was submitted by Bill and Bev “the two bs”. Bill was one of the founders of LSDOS and is the person that got me interested in Dutch ovens 20 years ago. I believe they have both passed on now.
