Dear Mr. Rollins: I've been doing this very same thing for a lot of years now. I've used Buttermilk, and added a little Baking Soda along with the Baking Powder, and Bacon Grease is just fine. We don't have any Mesquite here in the Sierra Nevada Mountains, but we do have an abundance of Black Oak, the best Oak there is to use for firewood, it burns hot and slow, and leaves almost no ashes. Cornbread, served up with Beef and Beans with lots of butter, and a good amount of good old Blackstrap Sorghum Molasses for the cornbread is just about heaven. It does my heart good to see you and your wife working together, it brings back memories of when my late wife and I spent so many wonderful hours cooking together, gardening, putting up firewood for the winter (usually about 8 cords of Black Oak), , canning, pickling, gathering wild blackberries,or just sitting in the evening reading and thanking the Lord for our day and one another, especially for the Love for each other that he gave us. I wish she was still with me, or that I was with her, I wouldn't care which, as long as we are together. Some day in Glory we'll be together again. I wish you all a wonderful Thanksgiving, treasure it and the memories you all make together. God Bless You and Yours Don Denison

Kent- I love your videos! I'm a Southern Gal, so I growed-up using a cast iron skillet. We just "retired" to an off-grid ranch this year, and I'm trying to live as authentic and natural as possible. So am working with a dutch oven almost every day now. If y'all ever get to North Central Nevada, I'd be honored to have you over for some good country cookin! :)

Just happened to come across this Video ! Loved it. I’ve been cooking with cast Iron, for approximately 15 yrs. Dutch ovens from 6” up to 14”. Several skillets and one Oval roaster. My mother would heat the bacon grease or lard in a iron skillet, then she would sprinkle a layer on corneal on top. She would brown the meal, then pour the cornmeal batter in. She would always comment, she didn’t want no “ Blonde Cornbread “. Had to be golden brown, top and bottom ! Good memories!!!
I made this for the umpteenth time today (to go with my Cornish game hens in another Dutch oven!), and it's always great. I use a 14" Dutch oven; however, I pour the batter into a 10" cast iron skillet and put the skillet inside the Dutch oven. For starters, I don't have a 10" Dutch oven. Furthermore, this technique allows me to just pick up the skillet and serve directly from there. I have an iron lid for the skillet, too, so leftovers stay right there.
Corn bread in the Dutch oven sounds delicious bud. You're such a good teacher of this Dutch oven cooking I'm always bragging you to my wife. She thinks I'm needing to make my chicken and potatoes

I've baked cornbread in an iron skillet in the oven for decades, but just baked my first in a dutch oven over coals. As a guest, I had no control over the wood used in the fire. Using a trivet with about 5" legs, and my new Lodge #8 camp dutch oven, I managed a pretty good batch on my first attempt. In hindsight, I should have taken it off of the bottom heat 2 or three minutes earlier, and continued the top heat or 2 or three minutes longer, but I was well within the ballpark. This is entirely doable with a little practice. Thank you, Kent!
Thank you, Mr. Rollins, I've been dialing back the heat on the bottom, and watching this shows me what to look for and when. Wish I could show you the pot I bake it in, a three-legged, handled pan that's pitted from age but still produces cornbread that slides right out. I usually cook up the bacon in the pan, let the pan cool a little, and add the bacon into the batter. Oh, and greetings from up north in the Adirondacks!
Just recently started watching, still watching & loving all the videos, they give me patience and remind me why i love cookin up a great meal now n then.. they are all unique respectful humble and funny better than any kinda cookin channel you can find. Ive been learning so much from them its amazing especially with cast iron. Hope your doing well Kent and more vids to come, God Bless brother.
had homemade cornbread and homemade beef/vegetable soup yesterday. yummy. baked indoors in the oven.keep those recipes coming. love the videos. I like the "holey" shovel. I guess it allows the ashes to fall through.

Thank you! Wanted to use cast iron since I was a kid but was kinda disconnected from my grandmother. My husband got me one skillet recently and your tips got me frying eggs this morning after my husband sanded that stupid preseasoning off a couple days ago. Im planning on slowly transitioning to just cast iron this year. Thank you for helping me pass down this knowledge to my kids!

Man, Kent's style would put most if not all them QVC baking gadgets to shame. Good to see traditions being kept alive. Now if only we have Kent's equivalent to some good old fashioned Injun cooking.

Another great video Kent, and thanks much! With my mom being from the deep south, I grew up on buttered corn bread, and while I cook exclusively on cast iron, I don't have a Dutch oven or tall trivet yet.
Al Machado the Cowboys quiet educational I've learned several things by watching him got three dutch ovens didn't know about the horseshoe trivets until watching his video time to crank up the old arc welder and make trivets always liked outdoor cooking they always tell us if you can't stand the Heat get out of the kitchen

Brother Cowboy you just proved my point and now I gotta try this technique and apply it to camping with stainless steel...I knew there was a way to bake directly over the coals without having to Dry Bake inside the Stainless steel which with camping equipment is very hard on the gear because of it's thin walls...I'll give this a go and let you know how it turns out and a shout out of course on the video I make...
You have the best lump coal I’ve seen on the UA-cam . Would you mind doing a tutorial on the different ways get a fire going. Time, prep, when to and when not to and how much, things like that. Lump for whatever reason has been more than just mines nemesis. Thanks for all the videos. Made a trivet just like yours in your honor when cooking your recipes in my Dutch oven. Was my first weld job and it was fun getting to cook just like you!!

I'm not clear on why it was removed from the Fire, but I plan on trying this one Day. Also impressed you have a Wife so Much younger than you, you did well on that as well Mr. Kent.
Just tried this for my first Dutch Oven recipe. Pulled it to soon and not enough coals. It was browning on top n firm but the bottom stuck. I know once I learn more, it’ll get better. Was fun to try. Thx.
Hey Kent. Thanks for the video. I always make white cornbread instead of yellow I do use bacon grease though. Try adding 2 heaping tbsp mayo to your mix. Adds even more moisture.
Hey Kent, man does that cornbread ever look scrumptious. As mentioned by another contributer, all that's missing is some good beans and smoked ham hocks. For sure, I'm going to try out the Tres Corn Mexican Bake. Well, I hope I remembered those four words in the correct order. My mother used to bake a fantastic Jalapeño Cornbread. I've got her recipe but it sure doesn't taste the same. Oh man, a bowl of beans with some good chow chow and a man sized piece of cornbread would sure hit the spot right now on this cold rainy afternoon. Thanks for sharing another fantastic video. Just planing to take the family camping and lost my old cornbread recipe and this is what I grew up cooking with Grandma and the boy scouts. In Australia we make a kind of bread like this called damper it's just flour water and a pinch of salt very bland but traditionally eaten with golden syrup or trekle

Born an raised in the south an we cooked in cast iron bacon grease an I still use Granny's Griswold, Wagner and old fire ring Lodge pans and an old Southern done top no leg five quart Dutch oven.
Said all that to say this, I love the old South feeling Kent brings back to my old heart and his recipes and Shannon's videos are my favorite things my pad does for me.

Hey Kent, man does that cornbread ever look scrumptious. As mentioned by another contributer, all that's missing is some good beans and smoked ham hocks.
For sure, I'm going to try out the Tres Corn Mexican Bake. Well, I hope I remembered those four words in the correct order. My mother used to bake a fantastic Jalapeño Cornbread. I've got her recipe but it sure doesn't taste the same.
Oh man, a bowl of beans with some good chow chow and a man sized piece of cornbread would sure hit the spot right now on this cold rainy afternoon.

My dad them used have an old grinder and he said it made good cornbread

Just planing to take the family camping and lost my old cornbread recipe and this is what I grew up cooking with Grandma and the boy scouts. Thank You and was so entertained, I'm still happy and laughing. Might just have to go out back yard in slippers and give it a go, or I'll be dreaming at night till I get this done

In Australia we make a kind of bread like this called damper it's just flour water and a pinch of salt very bland but traditionally eaten with golden syrup or trekle

I swear. My ex never got treated as well, as the beagle. Real nice batch of cornbread! The dark, golden color on the bottom told the story. You had to be using a sense of smell there. Thanks for all the vids, but the Cowboys coming into camp, on cold mornings, are the best!

Make iron skillet cornbread in the house all the time I like it in cast iron it makes it crispy!
Born an raised in the south an we cooked in cast iron bacon grease an I still use Granny's Griswold, Wagner and old fire ring Lodge pans and an old Southern done top no leg five quart Dutch oven.
Said all that to say this, I love the old South feeling Kent brings back to my old heart and his recipes and Shannon's videos are my favorite things my pad does for me.

I've used a lodge skillet on a trivet + camp oven lid. like to turn bread out onto plate to serve. easier with skillet + shorter cook time,
