- Vegetarian Mexican Casserole
1 can corn
1 can black beans, rinsed and drained
1 can diced tomatoes or Rotel tomatoes
2 cups brown rice (cooked)
1 cup salsa
1 cup sour cream
1 cup shredded cheese of choice
1/4 teaspoon pepper
Mix ingredients together and pour into a greased casserole dish. Top with green onions and more shredded cheese. Bake at 350 degrees for 50 minutes.

We make the meat go farther by adding in refried beans,tastes great and adds to the volume...and cheap,less than $1.00 per can. Such a good daughter, Belle.😘😁

My taco meat ALWAYS has cooked rice, beans and sometimes corn. Ground beef is almost 4 dollars a pound in Saskatchewan Canada.

I also grew up in Kenya. We called zebra noises a 'bark.' Solo''s impression sounded pretty close to me. I think they sound like a quieter, higher-pitched donkey.

My hubby makes our spaghettie sauce. We make 6 quarts at a time. It simmers in our crockpot all day. We freeze it in quart bags. My granddaughter loves taste testing. They just dip white bread in the sauce and decide what needs to be added.
You can freeze the sauce. I do it all the time.

I made your Mexican vegetarian casserole after a previous meal prep. It was fantastic. It will be added into our rotation. Very easy to prepare with items that I always have on hand. Thanks for the idea.
PLEASE PLEASE don’t make your zucchini or squash flowers go to waste. They are absolutely delicious fried. They are considered GOLD for Italians.
Yes! My grandmother and great aunts used to stuff the zucchini flowers with Parmesan, parsley and breadcrumb mixture, then lightly batter and fry! Then dip in marinara sauce. Delicious

That is exactly how Italians make their sauce. Simple is best. I add pesto to mine, 2 tbsp depending on quantity. No need to add lemon juice if your canning.
Just a tip, add some sugar or sugar replacement in your tomato sauce to balance the acidity of the tomatoes. It’s a little trick that really changes the game (from an Italian/French follower😉)

Agree - a little sugar cuts the acidity of all those tomatoes.
Or put onions in with the garlic and cook them until they caramelize. Sweet enough so you don't have to use additional sugar.

All prep helps. I used to take off a day or two every fall and cook 20-30lbs ground meat, chicken and other meats as well as rice, potatoes and veggies chopping for the freezer. It was a huge help during fall sports for my family.

I've been meal prepping for two for a couple of months now. I'm not consistent. It usually consists of me prepping a big Sunday dinner and prepping Mondays dinner. That gives us leftovers and work lunches till Wednesday. I try to pull meat to defrost on Tuesday, which gives us a choice of a fresh meal or leftovers on Thursdays. Bit because of our work schedule we usually eat out twice a week. Trying to reduce food waste. Helps a lot. Thanks for the tips.

I love cooking up the beef for tacos to have in the freezer as well! Same for homemade meatballs. They freeze great and can go from frozen right into the crockpot.

Lovely vlog! Homemade spaghetti sauce is really easy and not hard to pack lots of flavour into your meal. It’s very forgiving ingredient wise, you can just add what you like. I’d say just keep tasting as you cook. You’ll know when it has the taste you want. My own tip is to add a little fresh lemon juice when cooking anything tomatoey. It elevates the flavour. Hope your back is feeling a bit better Sarah.
Sarah I don’t know if it helps but I make my mashed potatoes in instant pot. I put water butter salt milk in the instant pot I cook everything together and take a meat masher or my hand held mixer straight in the pot and less dishes!

Hi Sara. Great video as usual.
We add some diced onion to our pasta sauce, it takes the sauce to the next level. When making chicken stock I always save veggie scraps and freeze them and use that for my stock.

We make squash, zucchini and sausage alot we love it and it is so easy. We are also waiting for our zucchini and squash in the garden as well. I make homemade spaghetti sauce from the garden as well we have tomatoes onions garlic and bell peppers from the garden chop them throw in to the crockpot or stockpot cook for 3 hours and puree it in the blender and can it in jars last year I made 20 quarts of sauce for the year.

Alright, after watching 100 of your meal prepping videos I think you’ve finally convinced me to try it! Lol
I like basil in my pasta sauce. I use the tomatoes with basil, oregano, and garlic in them; I also add fresh garlic, garlic powder, italian seasoning, and basil (fresh or dried). Solo will cook up the meat with onions or whatever he does lol
I've learned if you slightly tilt the immersion blender about 30-45 degrees it blends the best. If you do it up and down you're more likely to have it suction to the bottom or pop up and splatter.
Right now I'm jealous I need to get upand do some prepping.
