    Soufflé Pancakes Recipe:
    1 egg separated
    1 tbsp ap flour
    2 tsp cornstarch
    1 tbsp milk
    1/2 tsp vanilla extract
    1 tbsp sugar
    in small a bowl with egg yolk, add flour, cornstarch, milk, and vanilla extract. mix well and set aside.
    in a larger bowl with the egg white, mix until foamy then gradually add sugar. whisk until you get glossy stiff peaks.
    add half of the egg yolk mixture to the egg white and mix well don’t worry about being too hard on it. make sure it’s thoroughly mixed. add the rest of the yolk mixture and gently fold it in - don’t overmix at this point.
    in a pan on medium-low heat, wipe some oil on it then layer scoops of the batter on the pan. add two tsp of water and cover for 2 minutes. to make it fluffy, add an extra scoop of batter on top of and close the lid for another minute. flip or roll the pancake over and add two more tsps of water. cover and cook for another 3-4 minutes until the exterior of the pancake looks dry. make sure to adjust the heat if pan is getting too hot. let it sit after removing the lid for another two minutes to set and transfer to plate. dust with powdered sugar and top with strawberries. enjoy!

    ive found that adding each dollop separately and waiting for each to cook before adding the next one helps keep the shape of the pancake and makes them extra fluffy :D

    for anyone wondering how not to burn theirs (because i did)
    if you add and spread out the oil like she did, so that its not visible or anything, you can probably let the oil get warm and dont have to worry about burning the pancake. If you put oil, though, after preheating it and spreading it out, and you can still see the oil in places (like in thy than's video), dont let the oil get hot or anything (if the water makes noise when you pour it, while you still see the oil (not in this video), its likely gonna burn) and make sure to keep the heat low.
    thats not explained the best but
    -small amount of oil you can let it get warm/hot
    -if you can see the amount of oil you add (again, theres an example in the paragraph) dont let the oil get hot but add it after preheating the pan on low. Don't wait to add the batter, just add it while its there and then add the water. Make sure not to let the oil get too hot

    My pancake deflated, measure the ingredients, don't eyeball it like me. Also, make sure you stuff the peaks for long enough

      did you let the oil get warm/hot or just kept it at a cool/ room temperature temp. so that it didnt do anything when you added the water?

    I have seen a lot of videos on these pancakes lately. And it seems like it's not easy to find a recipe that works. So I was just wondering, are you following a recipe that you found, or you had to develope it yourself? Did it take a lot of tries?

      i tested a few diff ways and recipes, then tinkered with ratios and methods to get what worked best for me. i usually test things a few times with my own tweaks before making a video. to make something like this is about the technique... like i didn’t invent something new. my job is to make it easy enough for u all to replicate.

    I’ve tried it today and it wasn’t too fluffy and the thing that I didn’t like is that it has egg taste even though I’ve added more vanilla extract.

    Here's the measurements It's in the description here:

    Man, I've tried so many diff recipes and mine are never the right consistency. I tried adding more flour and cornstarch because the batter is always too runny. and then not only are they still not souffle pancakes but slightly thicker pancakes...that don't taste great lmao...Idk if I should have added more egg too or what.
    I want to learn to make these so bad xD I guess I'll try again next time.

    one thing- especially if I use your timings, my pancakes always seem to have blackened, burnt looking sides after I flip them, although they don’t taste burnt. do you know why, and how to stop this?

      definitely turn the heat down lower... or you can try a thicker frying pan!

    hey i have a question : everytime i tried to make japanese fluffy pancakes it went wrong because my batter was too light so everytime i tried to make a swirl of batter like you it would spread out all over the pan instead of staying together so how do i make sure my batter is stiff enough that it stays in its place instead of it flattening out all over the pan ?

      You probably over mixed the egg whites or didn't mix it enough. The stiffness of the egg whites are what gives the batter that ability to stay together ❤️❤️

    Hi. I need help. So everything looked right until I mixed them.
    I wasn’t able to get the mixture smooth like hers, it looked lumpy/bumpy and ended up over mixed as it started to deflate.
    How can I have a smooth mixture like hers and not lose the height and size? They also deflated a TON after I took the lid off. Sucked. Help!
