Great idea for a video! My first attempt at smashburgers were too thick. Good, but not enough crust. Second attempt I used smaller patties and pressed them thin. Smell-yah they were perfect!!!
Great video , i would say it depends on what is groun to make the burgers ... beef brisket , ribeye , chuck , or sirloin , back strap( deer ) steak . for the the thinnest smash burger ... sirloin .. get better taste of the spices ... for ribeye the mid smash and for the thickest the brisket .. move beef flavor .. will have to try SMASH THAT .. been watching TFK for some time , but not tried his spices .
I love the very thin burgers! But need lettuce, tomato, grilled onions, thousand island dressing, just like In an Out Burger makes…. Can I get a smell ya for that? Hahahaha, I also like to dome my burger Patties for 30 seconds to melt the cheese…..let me just say that my Blackstone purchase was worth it just to make smash burgers! Shout out to the flat top king for sending the care package, love your channel as well! All of you are awesome, love your content, keep it coming, I don’t really watch tv much, mostly you tube! What a great burger comparison. I've thought about doing that but never did. I would probably lean towards the 2nd burger. I would love to order the SMASHED burger seasoning but the link to Amazon doesn't work. I can't find by doing an Amazon search. Is there another site? Keep the videos coming, they are great.

This makes me want to try to do 1 super thin patty for the good seasoned/crispy bite, and put that on top of a thicker one for that more beefy bite. Try for the best of both worlds.

If you all are ever in the Midwest you need to check out Freddy's Frozen Custard and Steakburgers. Their burgers are smashed very thin and have a prominent crust. It's more than I like honestly as I'm a fan of #2 for your burgers. Not too thick but not so thin it still has some semblance of a burger patty still.
I haven’t done the side by side taste test yet, but one thing I have found is that I’ve never made a smash burger I didn’t love. Even ones that are over cooked don’t seem that dry to me (I’ve never had them copiously overcooked yet). Overall, I smash mine quite thin. As thin as your #2? Either that or a bit thinner. However, I prefer not having my patty as thin as a cornflake, so by eyeballing your experiment, I think I’d lean on #2. As always, you guys are awesome. I’m a big fan of Neil’s groups as well and concur that Smash That is “all that”. Griddle on brothers!
I prefer the lacey edge style smash burger in the style of George Motz, but he taught me to do it with a heavy spatula. I was trying to go traditionalist when I got my spatula and my burgers are amazing, but it’s work to get consistency with that method, so I definitely want to get a press like what you just showcased and I’ve known that for awhile. Practicality over cool. I know it’s going to be so much easier to smash with a tool like Neil’s. Hopefully he’s not too pricey. If not I’ll buy what I can. If you have a press recommendation, I’ll hear it. I did tell my girlfriend that I want a certain cookbook from those UA-cam brothers I like. We’ll see if she gets it done. I have to say I smash that smash that as thin as possible. I do prefer my smash burgers on a nice piece of Texas toast that has been toasted on both sides with mayo. Adds a little crunch.
I don't like it too thin. The crust make may be good but the texture is off. Its like pebbly, closer to taco meat than a burger patty. Oh and Shake That, top tier popcorn topping.
