Ok, I’m pretty good on the grill overall, but saw these and had to try it out. My entire family was blown away at how amazing these burgers taste! And yes, processed cheese is a must, with some Traeger cooked bacon and as my son said it was a religious experience. He ate 2 double patties and wanted a third! Thank you for great recipes and content.

made these with my mom and they absolutely rocked! I'd recommend everybody to try the smashing technique without heat in your surface using your tools so that if you don't have the specific ones Guga recommends, you are confident enough to smash them! Thanks Guga!

I made this burger and i must say, top 3 burgers i have ever eaten. I even bought the hot sauce used in the sauce and waited 2 weeks for it to come. (Its called mendez creamy pepper sauce btw). The sauce was salty, and with a flavor that i have never tasted before. Yes, i used american cheese and it melted into the patties! 10/10, i do reccomend making it

I made this last night, Every time I’ve ever tried to make my own burgers it’s been a disappointment, but not this one! Literally the best burger if not thing in general I’ve ever eaten, no messing around just rolled some Angus beef into 2.5oz balls like you said and squashed them out mega flat onto my insanely hot cast iron skillet (I don’t have a garden to bbq in) with parchment paper and a fish slice / meat hammer combo, seasoned and added cheese after flipping … changed my life too!!
Son said "Strangely i fancy a burger tonight, where's the nearest McD's?" I showed him to the local supermarket. In half an hour we had the most amazing burgers (side dish Sweetcorn tomato and basil salad). OMG. What a burger. Thanks Guga.

Making it with a wagyu blend won’t help as much because you have to cook ground beef to 160 degrees
Only problem wagyu burgers are a waste of wagyu. You control the fat content in burgers already. The miracle of wagyu steak is the marble. You'd be better off getting a good beefy tasting cut and mixing it with some good dry aged tallow.

Winston well he seasoned only one side, the question is, when you put the meat down, how to season the bottom one? Once you flipped it, that side is cooked, and you can’t season cooked beef

I just use Mayo, Ketchup, Mustard and Balsamico sirup but all in the same amount relation as he does in the video. the Balsamico gives the sauce a nice sweet and sour flavor kick. beside that I all do the same including toasting the buns with Mayo.

Made this tonight. They were great. I did substitute with potato rolls and thicker regular American cheese, not the yellow cheese. My neighbor across the street asked what I was grilling when I saw him, said it smelled good.
Whoever's reading the comments - if you buy a 1lb package of ground beef and split it into 6ths it makes this process very easy without a scale. First split the pound in half, then each half into thirds. This will give you 2.66oz balls which is very close to 2.5. This means a single 1lb package can be turned into three double-patty smash burgers with ease!

I made this burger for my wife's birthday and this is how she wants burgers done from now on. The flavor was incredible and beyond tasty and juicy. I am not a fan of processed cheese but I do have to say this IS the cheese for this burger.

My friend, I agree with you about the processed cheese. I love my strong vintage cheeses, but the creaminess of the processed cheese just lends itself so well to a burger. Try using an induction hob. The instant, powerful and controllable heat was a revolution for me and would work well for these burgers. I'll try it tomorrow!

Guga, today I did my best burger ever, I used your recommendations. Since I am making the Guines beer Brisket tomorrow I saved the fat of the trimming and used Axis deer ground and add few slices of bacon everything else standard! OMDG!!!!! Juicy, not overpowering on the fat since the Axis is very lean, old cheap cheese and the sauce. To die for!!!! Keep doing what you are doing! The thing that makes a waygu steak so good is the fat to lean ratio, but when making a burger you can control the exact amount of fat in your burger. If you want a fatty burger patty, just ground some fat up and boom 30% fat in your patties. If you use a waygu steak to make ground beef it’s a complete waste. Btw I’m not hating on the idea or a Aingel just giving my opinion.

Watching you for the first time ( Dearmeat for Dinner) and when you smashed the burger thin and browned it I remembered the best burger I have ever eaten. So, I am 80 years old and have destroyed many beef over the years fixing Hamburgers. However, back to the best ever,
It was in Kansas City Kansas at a fast food drive in place called Whopper Burger. Yep, that is the name. The 1/3 pound paddy was about to 6 to 7 inches wide, very thin, large buns toasted, shreaded lettus, tomatoe, cheese, pickle, mustard and catsup. I was probably 15 at the time and I wanted to order two, but my Grandfather said they are filling, eat one and if you want another I will get you one. I could eat like a fish, but one was enough.
Today my favorite burger is what we call a Mexican Burger, two 5 inch diameter thin paddies, place minced onion, Jalapeno peppers cut up thin, and cheddar cheese on one paddy, place the second patty on top, press meat edges to seal in the goodness and charcoal over a hot grate, turning carefully just once, but insure the paddy is browned well. I may then place the burger on a high shelf in the grill to allow the insides to finish cooking.
The peppers blend into the meat juices and are not so hot, but the flavor remains and the onion and cheese really make it all work.
Now a big toasted bun and garnish to your desired taste.
Warning: with tomatoe, lettus, pickles and additional onion. you will have to dislocate your jaw to get it in your mouth.

Made this yesterday...have to admit this is one of the best burgers I’ve ever had. For the hot sauce I used Yucateco, which is awesome. For the bun I used Martin’s potato buns which are just as good. Thanks for the video!

I only put salt and black pepper on the outside of the burger while it was in the skillet. NEVER mix salt in with ground meat...it dries it out and ruins the texture
I didn’t time them but a good way to tell when to flip it is when you start to see the meat turning gray through little holes in the middle. Remember you want to smash them pretty thin...when it starts to shrink you’ll begin to see tiny holes opening up and that’s when its time to flip. Then just cook the other side until it’s about the same color as the first
No worries about the cheese, Guga. Processed cheese is literally just regular cheddar with gelatin or another emulsifier added so the fat and cheese don’t separate when they melt. That’s why singles have that amazing gooey melty texture.
(Fun fact, if you prefer the taste of other cheeses, you can use them with an emulsifier and make your own melty processed cheese slices.)
GlaciusTS it’s wild that people don’t get this. So many ancient foods are actually based on this concept. Cacio e Pepe literally means cheese and pepper. It’s made with pasta, water, pecorino, and pepper. The starch is an emulsifier for the water and cheese to force it to combine. Even old italy new this lol
cheddar cheese, whey, water, protein concentrate, milk, sodium citrate, calcium phosphate, milkfat, gelatin, salt, sodium phosphate, lactic acid (as a preservative), annatto and paprika extract (for color), enzymes, Vitamin A palmitate, cheese culture, and Vitamin D3.
Fun fact, Kraft singles are grey before they add the yellow dye.
well only sodium citrate is needed to make natural cheeses into the melty American cheese.

You can put it in a bucket of water mixed with dishwasher for a day. It will come off very easily!
Cast iron is cleaning itself. You just have to give enough heat to it and it is done.

A smooth stainless steel griddle takes all of two minutes to clean.
The utensils are just as fast to clean.

Made these. It was so freaking good. The american cheese is necessary. It makes it way better than any other cheese. I made them inside on my griddle that I put on my stovetop. Be warned, it is very smokey, so if you have smoke alarms, consider turning them off or deactivating them somehow before cooking these.
